Turkey Sausage Over-Stuffed Mushrooms

A party isn’t complete without these Turkey Sausage Over Stuffed Mushrooms! They are made with lean turkey, making them a healthy and tasty treat!
Spring is here and I am in full party mode! I love the warm weather because it makes me think of outdoor tea parties, cookouts, and brunch!! I am a true Southern Belle that loves to entertain! I enjoy spending time with my friends and family, and or course eating some good food!
The first event of the Spring season will be my brunch! I wanted to do something fun and exciting with my girls! We always go out to dinner, but I wanted to invite them over to my house and cook them a nice meal!
When planning any event, the appetizer is VERY important! In my opinion, I think it sets the tone for the whole meal! A bad appetizer can seriously ruin your party!! I’ve always enjoyed stuffed mushrooms but the ones I’ve eaten were deep fried or stuffed with some type of greasy concoction! I wanted to create a recipe that would be light and delicious!
These Turkey Sausage Over Stuffed Mushrooms were a cinch to make! I prepped several baby bella mushrooms and layed them on a greased baking sheet. To prevent the mushrooms from rolling around, I cut a little bit of the bottom off of the mushrooms to make a flat surface!

The filling took less than 10 minutes to prepare! Once the filling was done, I stuffed the mushrooms and topped with a combo of crushed crackers and cheese! Pop those babies in the oven for 10 minutes and voila! Your party is now complete!! ?
Turkey Sausage Over-Stuffed Mushrooms
Ingredients
- 20 – 24 Baby Bella Mushrooms
- 1 tbsp corn oil
- 1 lb ground turkey sausage
- 1 small onion chopped
- 1 clove garlic minced
- 1 orange bell pepper chopped
- ¼ cup shredded mozzarella
- Salt/pepper to taste
For Topping:
- ½ cup crushed buttered round crackers
- ¼ cup shredded mozzarella
Instructions
- Preheat oven to 350 degrees.
- Wash and core about 20-24 baby bella mushrooms. Lay them on a greased baking sheet and set aside.
- In a large skillet, on medium heat, add oil onion, garlic, and bell pepper to the skillet. Cook until garlic is fragrant.
- Add turkey sausage and cook until done. Be sure to break up sausage while cooking.
- Drain off any excess oil and add ¼ cup shredded mozzarella to mixture.
- Stuff mushrooms with mixture. Set aside.
- Combine crushed crackers and ¼ cup mozzarella cheese and top each mushroom with cracker mixture.
- Bake for approximately 10 minutes or until topping is slightly brown.
- Serve and Enjoy!
