These Cajun Lightened-Up Grilled Shrimp Po’ Boys are the perfect way to enjoy those familiar New Orleans flavors, but with half the calories and fat!
I would give anything to be back in New Orleans!! Why?? Because they seriously have the best food! I went to New Orleans with my girls a couple of years ago, and we had a blast! Even though, I was pregnant with my second child at the time, I still had fun and enjoyed the night life!
And since all of my friends are foodies, we visited some pretty amazing restaurants! There was one restaurant in particular that served the most incredible Shrimp Po’ Boys! OMG! They were piled high with fried shrimp and tons of creamy sauce!

I was determined to recreate this recipe, but of course I wanted to add a healthier spin on it so I decided to make these Cajun Lightened-Up Grilled Shrimp Po’ Boys! To help keep the calorie and fat content at a minimum, I decided to grill my shrimp instead of frying it. I also made my own reduced-fat tartar sauce, which turned out fabulous!!
I wanted to keep those familiar N’awlins flavors, so I used my favorite Cajun Seasoning to season the shrimp! After that, I placed the shrimp on my stove top cast iron grill, and cooked the shrimp for about 2-3 minutes on each side, until the shrimp were done. The tartar sauce was a cinch to whip up! I just mixed together fat-free mayonnaise, sweet pickle relish, green onion, garlic, and a little red wine vinegar. That’s it!

When putting these Cajun Lightened-Up Grilled Shrimp Po’ Boys together, I added about a tablespoon of the homemade tartar sauce to the inside of the hoagie rolls, and then added lettuce, tomatoes, onions, and pickles. I added a hefty serving of the grilled shrimp to each po’boy and took a huge bite!! I couldn’t help myself! It looked sooo good!!
There are no words to describe to deliciousness that takes place in this recipe! The flavors were absolutely amazing! The homemade tartar sauce was the perfect touch to compliment those Cajun Spices! It felt like I was back in my favorite New Orleans restaurant!

Cajun Lightened-Up Grilled Shrimp Po’ Boys
Ingredients
- 1 lb large shrimp peeled and deveined
- 1 Tbsp olive oil
- 1 Tbsp Cajun seasoning
- 4 hoagie rolls split in half
- 2 cups shredded romaine lettuce
- 2 to matoes sliced
- 1/2 red onion thinly sliced
- ½ cup dill pickles
- Optional: 1 tsp chopped fresh parsley
- For the Tartar Sauce:
- 1/2 cup fat-free mayonnaise
- 1 clove garlic minced
- 2 tablespoons sweet pickle relish
- 1 large green onion chopped
- 2 teaspoons red wine vinegar
Instructions
- In a large bowl, mix together the mayonnaise, garlic, sweet pickle relish, onion, and red wine vinegar. For best results, refrigerate for 1 hour before serving.
- Preheat grill and add oil to grill. Season shrimp with Cajun seasoning and add to grill in a single layer. Cook for about 2 minutes per side, until shrimp are done and turn opaque. Remove from grill immediately and set aside.
- Spread tartar sauce on each side of each hoagie roll. Top with lettuce, tomato slices, onions, and pickles.
- Divide shrimp evenly among the hoagie rolls.
- Sprinkle with a little chopped parsley, if desired, and enjoy!
