Happy Fry-Day, Y’all!!! Lol!! I know that was a little corny, but I couldn’t resist! It’s a beautiful Friday and I just so happened to have a new fry recipe for you today!

I absolutely love potatoes, but I’m always trying to find a way to add a new spin on the traditional French Fry recipe! Since I had an extra bunch of asparagus in the fridge, I decided to make these delicious Crispy Baked Parmesan Asparagus Fries!

We are huge asparagus fans in our home, so the thought of turning asparagus into fries made my family very excited! Besides being oh-so-tasty, asparagus has a lot of great nutritional benefits too!

  • Asparagus contains a very good source of fiber, folate, vitamins A, C, E and K, as well as chromium, which is a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells.
  • One cup of cooked asparagus has only 40 calories, 4 grams of protein, 4 grams of fiber and 404 milligrams of potassium.
  • Asparagus helps to neutralize cell-damaging free radicals, which may help slow down the aging process and reduce inflammation.

When making this recipe, I reduced the fat and cholesterol content by using only the egg whites, instead of the yolks, and baking the fries instead of deep frying them in oil. These Crispy Baked Parmesan Asparagus Fries were ready in less than 20 minutes, and they did not last very long!

After I snapped a few pics of the finished product, my kids and husband literally devoured all of these Crispy Baked Parmesan Asparagus Fries! I guess you can say that they were pretty amazing! Crispy Baked Parmesan Asparagus Fries

Ingredients

  • 1 bunch asparagus ends trimmed
  • 4 egg whites whisked
  • ¾ cup all-purpose flour
  • ¼ cup grated parmesan
  • 2 tbsp Italian seasoning
  • Optional: sea salt

Instructions

  • Preheat oven to 400 degrees F.
  • In a medium bowl, add egg whites and toss in asparagus. Set aside.
  • In a large bowl, combine flour, parmesan, and Italian seasoning. Add asparagus to flour mixture and toss to coat.
  • Arrange asparagus onto a greased baking sheet and bake for about 15-20 minutes, or until asparagus is brown and crispy.
  • Sprinkle with sea salt, if desired, and Enjoy!
