Before putting this recipe together, you have to massage your kale. Yep, that’s right…give your kale a good ol’ massage! ? Massaging your kale makes the leaves tender and light. As you rub them down with olive oil, the leaves will darken and the texture will become soft.

Massaged Kale & Quinoa Greek Salad

Ingredients

  • 1 12 oz package Nature’s Greens Organic Kale Greens
  • 2 tablespoons olive oil
  • ½ cup Italian Dressing
  • 1 cucumber sliced
  • 2 cups grape tomatoes sliced
  • ½ cup kalamata olives pitted
  • ½ purple onion thinly sliced
  • ¼ cup crumbled feta
  • 2 cups cooked quinoa
  • Salt/pepper to taste
  • 2 cups cooked quinoa

Instructions

  • Add 2 tablespoons of olive oil to a large bowl. Add in kale massage the kale in handfuls, between your fingers, for about 2-3 minutes, or until the leaves soften and darken in color.
  • Toss in the sliced cucumbers, grape tomatoes, kalamata olives, purple onions, crumbled feta and Italian Dressing. Add salt/pepper to taste.
  • Scoop quinoa on top of salad, and top with additional feta, if desired. Enjoy!
