I don’t think I’ll ever get sick of eating tacos. And I’m sure that my kids feel the same way! They’re so versatile, and come in many forms such as, steak tacos, street tacos, soft tacos, crispy tacos, …the list goes on & on. And these Quinoa, Grilled Corn & Black Bean Tacos are no exception.
They are stuffed with fresh tomatoes, grilled corn, black beans, and quinoa that’s been seasoned perfectly with my special blend of taco seasoning. I love using quinoa in several of my recipes, particularly Success Tri-Color Boil-in-Bag Quinoa. It’s so easy to make, you can’t mess it up! To prepare, you simply submerge 1 bag of Success Tri-Color Boil-in-Bag Quinoa in water, bring the water to a boil and boil uncovered for 10 minutes. No measure, no mess, it’s so quick and easy.
Quick Tip: You can also cook Success Tri-Color Boil-in-Bag Quinoa in the microwave!
To cook quinoa in the microwave, in a 2-quart microwave-safe dish, submerge 1 bag of Success Tri-Color Boil-in-Bag Quinoa in about 4 cups (1 quart) of water. Microwave on HIGH for approximately 15 minutes. Remove the bag with a fork and drain. Then cut open the bag and empty cooked quinoa into a serving dish. Easy, right?

How to Make Tacos Quinoa, Grilled Corn & Black Bean Tacos
One of my favorite things about these easy tacos is that they’re made with just a few simple ingredients, making them super easy to whip up any night of the week.
Start by heating a grill to medium heat and grill the whole ears of corn until charred on all sides. Slice the kernels off the corn and place in a bowl. Set aside.
Next, prepare 2 packs of Success Tri-Color Boil-in-Bag Quinoa according to the package directions. Transfer quinoa to a medium bowl and stir in 1 tablespoon of taco seasoning and fresh lime juice. Season with salt & pepper to taste.
To assemble the tacos, spread quinoa down the center of the tortillas, then top with a generous serving of tomatoes, grilled corn, and black beans. Sprinkle with fresh cilantro and serve!

Ingredients
- 2 packs Success Tri-Color Boil-in-Bag Quinoa
- 1 tablespoon taco seasoning
- Juice of 1 lime
- 3 ears fresh corn
- 2 tomatoes diced
- 1 (14 oz can) black beans rinsed & drained
- Salt & pepper to taste
- 8 small flour tortillas
- Fresh cilantro for garnish
