Extra Fluffy Chocolate Chip Pancakes

Ingredients

  • 1 ¼ cups all-purpose flour
  • 3/4 cup unsweetened almond milk or skim milk
  • 2 tsp baking powder
  • ¾ tsp salt
  • 1 ½ tbsp sugar
  • 3 tbsp vegetable oil
  • 1 egg
  • 1 ½ tsp vanilla
  • ¼ cup milk chocolate chips

Instructions

  1. In a medium bowl, combine flour, baking powder, salt, and sugar. Set aside.
  2. In a small bowl, combine the egg, almond milk, oil, and vanilla. Add mixture to dry ingredients and stir until combined. Let batter sit for about 5 minutes.
  3. Fold in chocolate chips.
  4. Heat griddle to medium. Using a 1/3 measuring cup, scoop batter onto griddle and cook for about 2 minutes on each side. Flip over when surface is bubbly and edges are dry.
  5. Serve immediately with your desired toppings and enjoy!
