Grilled Ginger Peanut Glazed Mahi-Mahi with Jalapeno Peanut Butter Slaw

What’s one thing in this world that brings you joy?? Besides my kids and my husband, I would have to say peanut butter! Yes, you heard right…peanut butter!!

Peanut butter is one of those foods that I keep on hand in our pantry because the entire family loves it! Not only is it delicious and affordable, it contains some pretty awesome nutrients too! Did you know that two tablespoons of peanut butter provide eight powerful grams of protein, two grams of filling fiber, and 12 grams of unsaturated fat!

Typically, peanut butter is eaten in mostly sweet recipes, but I enjoy it in savory dishes such as this Grilled Ginger Peanut Glazed Mahi-Mahi served with the most amazing Jalapeno Peanut Butter Slaw! You’ll be pleasantly surprised to know that the creamy peanut butter adds the perfect touch and really brings out the flavors in this recipe!

This dish may look fancy, but it’s really simple to make! I started by making the jalapeno slaw. I whisked together my creamy peanut butter, vinegar, lemon juice, and seasonings and then tossed in the other ingredients. I placed the jalapeno peanut butter slaw it in the refrigerator to allow those flavors to really come together!

Next, I made my peanut glaze and coated each piece of mahi-mahi with about 1 tablespoon of the glaze. Then I grilled each piece of fish for about 3-5 minutes on each side, until it was thoroughly cooked throughout.

Before serving, I placed a generous amount of the jalapeno peanut butter slaw on a serving platter and arranged the grilled ginger peanut glazed mahi-mahi on top. The flavors in this recipe are absolutely incredible! That creamy peanut butter is truly star of the show! It provides a subtle, nutty flavor and really brings out the savory components!

Grilled Ginger Peanut Glazed Mahi-Mahi with Jalapeno Peanut Butter Slaw

Ingredients

  • 6 skinless mahi-mahi filets
  • ¼ cup creamy peanut butter your favorite brand
  • 1 tsp ground ginger
  • 2 tsp green onions
  • 3 tbsp soy sauce
  • ¼ cup water
  • Salt/pepper to taste

For the Jalapeno Peanut Putter Slaw:

  • 2 cups red cabbage shredded
  • 3 tbsp green onions chopped
  • 1 cup matchstick carrots
  • 1 green jalapeno pepper seeds removed, diced
  • 2 tsp Vinegar
  • 1 and ½ tbsp lemon juice
  • ¼ cup creamy peanut butter your favorite brand
  • 1 tsp garlic powder
  • Salt/pepper to taste

Instructions

  • In a medium bowl, whisk together 2 tsp of vinegar, 1 and ½ tbsp of lemon juice, and ¼ cup creamy peanut butter. Toss in red cabbage, 3 tbsp green onions, carrots, jalapeno, and garlic powder. Season with salt/pepper to taste and place in the refrigerator until ready to use.
  • Preheat grill to medium-high heat.
  • In a small bowl, whisk together ¼ cup creamy peanut butter, ground ginger, 2 tsp green onions, soy sauce, and water. Season with salt/pepper to taste. Spread about 1 tbsp of the glaze onto each piece of mahi-mahi.
  • Grill for 3-5 minutes per side, until golden thoroughly cooked throughout.
  • To serve, place a generous amount of the jalapeno peanut butter slaw on a serving platter and arrange the grilled ginger peanut glazed mahi-mahi on top.
