Cajun Herb Egg Salad

One of my favorite things about summertime…besides the gorgeous weather…. is hosting cookouts for our close friends and family. It’s something that I look forward to every year because it gives us a chance to enjoy each other and eat some really good food!
Whenever we host a cookout, I like for everyone to bring a dish…which usually ends up turning into a “silent” competition. Everyone becomes very secretive about what they are bringing until the day of the cookout. And the dish that gets eaten first, or has the least amount left over is the “silent” winner! Lol! I know that it sounds silly, but it’s something that makes our cookouts fun.
For our upcoming cookout, I decided to make my famous Cajun Herb Egg Salad. Egg salad is one of my favorite things to make because eggs are one of the least expensive sources of high-quality protein and you can adapt your egg salad flavor profile based on what ingredients you have on hand. No wonder it was a staple throughout my college career. I’ve been making egg salad for so long, I consider myself the “Egg Salad Queen” ?.
Most people don’t know this, but eggs are one of the only foods that naturally has vitamin D (1 mcg per large egg), which along with calcium, is critical for building strong bones. Eggs are also a naturally nutrient-rich choice providing a good or excellent source of eight essential nutrients, including choline, plus the carotenoids lutein & zeaxanthin (which benefit brain and eye health). Choline is essential for normal functioning of all cells, and it’s especially important during pregnancy, and the first 1000 days (conception to two years of life) to support healthy brain development.
As I’ve matured, my taste buds have become a little bit more sophisticated, so I spruced up my typical egg salad recipe and created this fabulous Cajun Herb Egg Salad. I absolutely LOVE adding fresh herbs to my recipes because it adds so much flavor, while the cajun seasoning adds the perfect amount of spice and zest!
This Cajun Herb Egg Salad can be served with toast, crackers, or my favorite way…lettuce wraps! I love serving it in giant leaves of romaine because it adds a nice refreshing crunch, looks beautiful, and cuts down on the calorie and carbohydrate content. I can’t wait to serve this at our cookout and see if I win the “silent” cooking competition! Lol!

Cajun Herb Egg Salad
Ingredients
- 10 hard-boiled eggs cooled and peeled
- ½ cup reduced fat mayonnaise
- 1 tbsp yellow mustard
- 2 tbsp green onions diced
- 1 tsp of fresh oregano minced
- 1 tsp of fresh thyme minced
- 2 tsp Cajun seasoning
- ½ tsp sugar
- Salt/pepper to taste
- Optional: 8-10 large romaine leaves
Instructions
- Roughly chop hard-boiled eggs and transfer to a large bowl.
- Add mayonnaise, mustard, green onions, oregano, thyme, Cajun seasoning, and sugar to bowl and stir until evenly combined. Season with salt and pepper to taste and keep refrigerated until ready to serve.
- If desired, scoop egg salad onto romaine leaves and serve.
