Double Chocolate Pistachio Bread

This ultra-chocolatey, extra fudgy low-fat Double Chocolate Pistachio Bread recipe is super easy to make, and it’s great to serve for breakfast or dessert!
Since I have a lot of time on my hands these days, I’ve decided to brush up on my baking skills! Even though I’m not the best baker in the world, baking gives me a sense of calmness and serenity…and whenever the recipe actually turns out fairly decent, my entire day is MADE!
Lately, I’ve been into making quick breads, such as this Double Chocolate Pistachio Bread. Even though this Double Chocolate Pistachio Bread tastes super chocolatey and decadent, it’s actually fairly low in fat and contains a great source of protein.

I was able to decrease the fat content by replacing some of the oil with unsweetened applesauce, and I used low fat Greek yogurt to help tenderize the bread which added an additional amount of protein.
My little secret ingredient…
To make this chocolate bread incredibly rich, I added in a little espresso powder. Espresso powder, or instant coffee powder, are commonly used in chocolate recipes.

It accentuates the chocolate flavor, and makes each bite EXPLODE with chocolate. If you completely despise the taste of coffee, you can omit this ingredient, but I promise that you won’t be able to taste it!
This Double Chocolate Pistachio Bread was possibly the best chocolate dessert that I’ve ever made! And that’s saying a lot because I was absolutely in LOVE with my Double Chocolate Banana Muffins until now lol! This chocolate bread was very tender, very chocolatey, and very moist! And guess what y’all?? It was just as delicious the next day!

Double Chocolate Pistachio Bread
Ingredients
- 1 and 1/2 cups all-purpose flour
- 1/3 cup cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon espresso powder (or 1/2 teaspoon instant coffee powder) optional
- 1/2 cup unsweetened applesauce
- 1/3 cup oil
- 1/2 cup sugar
- 1/3 cup light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2/3 cup low fat plain Greek yogurt
- 3/4 cup milk chocolate chips
- 1/3 cup pistachios crushed
Instructions
- Preheat the oven to 350 degrees F. Grease a 9X5-inch baking pan and set aside.
- In a medium bowl, combine the flour, cocoa, salt, baking powder, espresso powder and baking soda.
- In a large bowl, whisk together the applesauce, oil, sugar, brown sugar, eggs, vanilla and Greek yogurt. Stir in the dry ingredients and pour half of the chocolate chips into the batter. Stir until the batter is just combined; be careful not to overmix.
- Spread the batter evenly in the prepared pan and sprinkle the remaining chocolate chips and crushed pistachios on top. Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 5-10 minutes before removing it from the pan. Transfer to a cooling rack to cool completely.
