I think it’s safe to say that kale is definitely one of my favorite veggies! My family and I eat it at least 3 to 4 times a week. We love it because it’s so versatile and you can add it to almost any recipe or entrée!

HOW TO MAKE SAUTEED KALE WITH CHICKPEAS, OKRA, & TOMATOES
Preparing this recipe is super easy. Simply toss all of the ingredients into a large skillet and cook until the veggies are nice and tender. Season with a little salt and pepper to taste and you’ve got yourself and quick and nutritious meal!

*Tip—add the okra in towards the end to prevent them from getting too slimy during the cooking process.

Check your fridge, freezer, and pantry to see what you have on hand and try to create recipes with those ingredients. This will help to eliminate food waste and help to save you a little bit of money.
- Keep it Simple.
When deciding on what to prepare, try to keep your recipes simple and easy. Meal planning is not the time to try out your latest, complicated meal idea. Save that recipe for another day lol! Keeping things simple will help to prevent unnecessary stress and headaches!
- Incorporate Food Themes.
Deciding what to prepare can be a daunting task, but assigning a food theme to each night of the week can help to spark your menu planning. In our home, we are huge fans of Meatless Monday, Taco Tuesday, and Pizza Party Fridays.

Sautéed Kale with Chickpeas, Okra, & Tomatoes
- 3 tbsp oil
- 1 (12 oz) package Nature’s Greens Organic Kale Greens
- 2 cloves garlic minced
- 1 onion thinly sliced
- 1 (15.5 oz) can chickpeas drained & rinsed
- 2 cups grape tomatoes sliced in half
- 8 oz fresh okra
- 1/2 tsp paprika
- Salt and pepper to taste
- Heat oil in a large skillet on medium-high heat and start cooking the garlic and onions. Add in the kale, chickpeas, and tomatoes. Cook for 5 minutes or until kale becomes tender.
- Toss in okra and cook for an additional 5 minutes. Season with paprika and salt/pepper to taste.
