To help your week go a little bit smoother, here are a few of my meal planning tips:

  1. Use What You Have on Hand.

Check your fridge, freezer, and pantry to see what you have on hand and try to create recipes with those ingredients. This will help to eliminate food waste and help to save you a little bit of money.

  • Keep it Simple.

When deciding on what to prepare, try to keep your recipes simple and easy. Meal planning is not the time to try out your latest, complicated meal idea. Save that recipe for another day lol! Keeping things simple will help to prevent unnecessary stress and headaches!

  • Incorporate Food Themes.

Deciding what to prepare can be a daunting task, but assigning a food theme to each night of the week can help to spark your menu planning. In our home, we are huge fans of Meatless Monday, Taco Tuesday, and Pizza Party Fridays.

Sautéed Kale with Chickpeas, Okra, & Tomatoes

Servings 6

Ingredients

  • 3 tbsp oil
  • 1 (12 oz) package Nature’s Greens Organic Kale Greens
  • 2 cloves garlic minced
  • 1 onion thinly sliced
  • 1 (15.5 oz) can chickpeas drained & rinsed
  • 2 cups grape tomatoes sliced in half
  • 8 oz fresh okra
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  • Heat oil in a large skillet on medium-high heat and start cooking the garlic and onions. Add in the kale, chickpeas, and tomatoes. Cook for 5 minutes or until kale becomes tender.
  • Toss in okra and cook for an additional 5 minutes. Season with paprika and salt/pepper to taste.
  • Enjoy!

    Made with kale and tomatoes as directed, omitted the chickpeas.
    Prepared pasta added olive oil and then added the veggies. Omg! Delicious!
