HOW TO MAKE HEALTHY BERRY OAT BARS

This recipe is very easy to make and only takes a few simple ingredients. Start by making the chia seed berry jam. Puree 1 and ½ cups of frozen (thawed) Oregon raspberries and blackberries. Add in the maple syrup and chia seeds. Chia seeds are loaded with healthy fat and protein, which really adds a little healthy boost to these breakfast bars! Place in the fridge until you’re ready to use it.

Next, combine the oats, whole wheat flour, baking soda, salt, sugar, egg, butter, maple syrup, and milk in a large bowl. Reserve about a cup of the dough for the crumble, and press the rest of the dough into the bottom of an 8×8 inch baking dish.

Spread the chia berry jam on top of the oatmeal layer, and drop the reserved ½ cup oat mixture in small bits on top. Bake the bars at 350 degrees for approximately 30 minutes.

Berry Chia Seed Jam Oat Bars

Ingredients

  • 1 and ½ cups rolled oats
  • 1 cup whole wheat flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup brown sugar
  • 1 egg
  • ½ cup butter melted
  • ¼ cup maple syrup
  • 2 and ½ Tbsp milk

For Chia Seed Jam

  • 1 and ½ cups frozen Oregon raspberries and blackberries thawed
  • 2 tbsp pure maple syrup to taste
  • 2 tbsp chia seeds

Instructions

Chia Seed Berry Jam:

  • Puree For 1 and ½ cups of frozen (thawed) Oregon raspberries and blackberries in a blender or food processor. Stir in 2 tablespoons of maple syrup and 2 tablespoons of chia seeds. Place in the refrigerator.

For the Oat Bars:

  • Preheat oven to 350 degrees F.
  • Combine the oats, whole wheat flour, baking soda, salt, sugar, egg, butter, maple syrup, and milk in a large bowl. Stir and reserve about a cup of the dough for the crumble.
  • Press the rest of the dough into the bottom of an 8×8 inch baking dish, that is lined with parchment paper.
  • Spread the chia berry jam on top of the oatmeal layer and drop the reserved ½ cup oat mixture in small bits on top.
  • Place the bars in the oven and bake for approximately 30 minutes. When done, let the bars to cool for at least 30 minutes before gently removing them from the pan. Slice, serve, and enjoy!

    Thank you for this recipe! I made it tonight. I had to use white flour because I was out of wheat. I also used frozen blueberries because that’s what I had. Otherwise I followed it exactly. It was tasty and not overly sweet. I like that it uses oats, fruit and chia seeds. I wonder if it could use agave instead of maple syrup? One more thing; one time it says to reserve about a cup of crumble for the top; another time it says 1/2 cup. I went in the middle and used about 3/4 cup. ; )
