Sandwiches are always a great choice for those busy weeknights. They’re extremely easy to prepare and super versatile! My go-to sandwich recipes usually include the traditional PB&J, or an easy ham & cheese sandwich, but this time I decided to switch things up and make a Cheesy Chicken Fajita Sandwich.
I just love the idea of turning our favorite meals into a sandwich, which is exactly what I did with this recipe! Chicken fajitas are very common in our home, it’s just one of those meals that is easy to prepare and makes the perfect meal any day of the week.
When making these Chicken Fajita Sandwiches, I wanted to make sure that it was very cheesy, so I used Borden® Cheese Singles. Borden Cheese can be found in the dairy aisle at Publix and is the perfect grilling companion. It pairs well with burgers, veggie burgers, chicken, and other grilling favorites. How To Make Cheesy Chicken Fajita Sandwiches
These chicken fajita sandwiches were really easy to make! Here’s what you need:
- Borden Cheese Singles
- Olive Oil
- Assorted Bell Peppers
- Chicken Breast
- Whole Wheat Buns
- Fajita Seasoning
Start by preparing your fajita seasoning. You can definitely use premade fajita seasoning, but I enjoy making my seasoning from scratch because it allows to control the salt content.
How to make your own fajita seasoning:
To make your own fajita seasoning, whisk together 2 teaspoons of ground cumin
1 tablespoon of chili powder, 3 teaspoons of smoked paprika, 2 teaspoons of garlic powder, ¼ teaspoon of cayenne pepper, and salt/pepper to taste. Store in an airtight container.
Next, slice your bell peppers. Add olive oil to a large skillet and sauté the bell peppers over medium heat. Cook the peppers for about 3-5 minutes.
Season the chicken breast with the fajita seasoning on each side and place the chicken into the skillet. Cook until the chicken is cooked throughout, and the peppers are soft.
Reduce heat to low and place a slice of Borden Cheese on top of each chicken breast. Cover with a lid until the cheese is melted and remove from the heat.
Put together the Chicken Fajita Sandwiches and serve!
What to Serve With Cheesy Chicken Fajita Sandwiches
These sandwiches are pretty filling, so they can be served alone, but you can certainly pair them with a side salad, green beans, or a serving of sweet potato fries. Yum!!

Cheesy Chicken Fajita Sandwiches
- 4 thinly sliced chicken breasts about 4oz each
- 4 slices Borden® Cheese Singles
- 3 tablespoons olive oil
- 1 green bell pepper sliced
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 4 whole wheat buns
- 3 tablespoons fajita seasoning
- To a large skillet, add olive oil and sauté the bell peppers over medium heat. Cook the peppers for about 3-5 minutes.
- Season the chicken breast with the fajita seasoning, on both sides, and place the chicken into the skillet. Cook until the chicken is cooked throughout, and the peppers are soft.
- Reduce heat to low and place a slice of Borden Cheese on top of each chicken breast. Cover with a lid until the cheese is melted and remove from the heat.
- Separate the whole wheat buns and put together the Chicken Fajita Sandwiches. Serve warm and Enjoy!
