Thank you, Oregon Berries, for sponsoring this post. As always, all thoughts and opinions are truly my own.
One food that my family can eat every day is pizza. We LOVE pizza! While we’re not picky about whether it’s frozen or delivery, I think that my kids truly enjoy homemade pizza. They love to pile on as many toppings as possible and come up with crazy flavor combinations. Their most recent combination was cheese crackers and sausage, and it was surprisingly very tasty!
I decided to add a little sophistication to our pizza nights and made a Blackberry Caramelized Onion & Goat Cheese Pizza. I know what you’re thinking—blackberries on pizza?! Trust me on this one, it’s amazing! I love adding Oregon blackberries to my recipes because they are extremely versatile. They pair perfectly with sweet or savory ingredients, and they contain some great benefits too!
Oregon blackberries contain a great source of Vitamin C, which is essential for building and maintaining strong bones. Vitamin C also helps your body absorb iron and can speed up the healing process.
Blackberries have also been linked to brain health. Blackberries get their dark, rich color from anthocyanins, which are compounds that may protect the brain from oxidative stress and reduce the effects of conditions like dementia.
For this recipe, you can choose to use fresh or frozen blackberries. I used fresh blackberries, but I always keep several bags of frozen Oregon blackberries on hand. Frozen Oregon berries are just as nutritious as fresh because they are picked at the peak of ripeness and frozen within 24 hours of being picked. This helps to lock in that those awesome nutrients. How To Make Blackberry Goat Cheese Pizza
This Blackberry Caramelized Onion & Goat Cheese Pizza is super easy to make! To keep things simple and stress-free, I used a premade pizza crust, but you can certainly make your own, if desired.
Start by heating a skillet to med-high heat and coat the bottom of the skillet with olive oil. Add the sliced onions and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally.
After 10 minutes, sprinkle some salt and a little sugar over the onions. The sugar helps with the caramelization process. Let the onions cook for 20 minutes, stirring every few minutes, or until they become brown. Remove from heat and set aside.
Next, drizzle a little olive oil on the pizza crust and sprinkle with mozzarella cheese. Spread the caramelized onions, goat cheese, and blackberries on top, and bake for about 15 minutes at 350 degrees F or until the pizza crust is golden brown.
Top with fresh basil, cut into slices, and serve immediately.
This Blackberry Caramelized Onion & Goat Cheese Pizza makes for a great appetizer or a quick weeknight dinner if you’re feeling a little fancy! Enjoy!
