Easy Beef, Veggie & Rice Hand Pies

To help ‘Eat Down My Fridge,’ I decided to make these super yummy Easy Beef, Veggie & Rice Hand Pies! I’m not sure if you are already aware…but I absolutely love pies! It’s just something about that flaky crust paired with a tasty, flavorful filling. Most of the pies featured on my site are sweet pies, but I’m also a huge fan of savory pies, such as these Beef, Veggie & Rice Hand Pies.

Most beef hand pie recipes only include meat and a few veggies, but I decided to jazz up this recipe a little bit and help reduce food waste in the process, by using up a few ingredients that I already had on hand. I found a can of mixed veggies in the pantry and a half head of red cabbage in the refrigerator, so I decided to use those items. I also used Success Basmati Rice, which is something that I always keep stocked in my pantry.

I love using Success Rice because it is a no measure, no mess, boil-in-bag rice brand. Simply drop the bag in water, let it cook for 10 minutes, and the rice comes out soft and fluffy every time. The Basmati Rice is a great choice for this recipe because of its slightly floral aroma and distinctive nutty flavor. It goes perfectly with a variety of savory and spicy dishes.

How to Make Beef Hand Pies

If you want to save a little time in the kitchen, I recommend using pre-made refrigerated crescent roll dough, but if you’re feeling up to it, you can certainly make your own dough from scratch.  

Start by pre-heating the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside. Cook one package of Success Basmati Rice per the package instructions and set aside.

Next, add your beef to a medium pan and cook for about 5-6 minutes, on med-high heat, or until the beef is cooked through. Drain any excess oil and return the pan to heat. Add in the cabbage and mixed vegetables. Stir and cook for about 5 minutes. Add in the rice and season with garlic powder, and salt/pepper to taste.

Remove the mixture from heat and allow it to cool slightly. Roll your dough to about ⅛ inch. Cut out approximately 9 circles that are about 4-5 inches in diameter. Place 2-3 tablespoons of the filling in the center of each round. Fold the circle over the filling to make a half circle. Using the back side of a fork, press around the edges to seal the pie.

Transfer the pies to the prepared baking sheet. Make an egg wash by whisking together 1 egg and 1 tablespoon of water and brush the pies with the egg wash. 

Bake for about 20-25 minutes until they are a beautiful golden brown. Remove from oven and serve warm. So good!

Ingredients

  • 1 package Success Basmati Rice
  • 2 tubes refrigerated crescent roll dough preferably the non-perforated kind
  • 1 lb ground beef
  • 1 cup shredded red cabbage
  • 1 15oz can mixed vegetables drained
  • 2 teaspoons garlic powder
  • Salt/pepper to taste
  • 1 egg for egg wash

Instructions

  • Pre-heat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  • Cook one package of Success Basmati Rice per the package instructions and set aside.
