Start the day with this delicious, easy Blueberry Chia Pudding! It only requires 5 simple ingredients and it’s perfect for meal prepping. Not only is it vegan, it’s also naturally gluten free!
Growing up, I was always told that breakfast was the most important meal of the day. Although I feel that all meals are equally important—breakfast helps to set the tone for a great day, especially one that contains several filling nutrients such as this Blueberry Chia Pudding.

Chia pudding is extremely easy to make and extremely versatile. You can add in your favorite combination of fruit, nuts, sweetener, and anything else that your heart desires! Chia seeds have very little flavor, so you don’t have to worry about them competing with other flavors. They also soften in the presence of any liquid and become a less detectable texture.
Chia seeds can be used in a variety of ways. They can be added to cereals, beverages, muffins, breads, and other baked goods to boost their nutritional value, but my favorite way to enjoy them is in a chia pudding recipe. And speaking of nutritional value…
Nutrition Benefits of Chia Seeds
- Chia seeds are high in omega-3 fatty acids and fiber.
- Chia seeds are an excellent source of fiber, which can help to improve heart health, reduce cholesterol levels and promote overall health.
- Chia seeds are also an excellent source of antioxidants.
In this chia pudding recipe, I decided to use a combination of chia seeds, blueberries, almond milk, maple syrup, and vanilla extract. You can choose to use fresh or frozen fruit, but I prefer to use frozen fruit because I always have it on hand and when the frozen fruit thaws, the juice adds the perfect amount of sweetness and color to the pudding.

This super creamy and perfectly sweet treat is the perfect breakfast or dessert. It’s packed with lots of bold, blueberry flavors and can be prepped days in advance. Enjoy!

Easy Blueberry Chia Pudding
Ingredients
- 7 tablespoons chia seeds
- 1 & ½ cups almond milk or milk of choice
- 1 cup frozen blueberries
- ½ teaspoon vanilla extract
- 1-2 tablespoon maple syrup
Instructions
- In a medium bowl, combine all ingredients. Mash some of the blueberries with a fork and cover.
- Place in the fridge overnight, or for at least 2 hours. Stir the chia pudding again before serving.
