This Cheesy Zucchini Lasagna is a fresh take on a classic comfort food dish! It’s loaded with veggies, but still contains those the rich and scrumptious flavors of a traditional lasagna. And it only costs $15 to make!

Guess what, y’all?! I’m back with another cheap, healthy meal! This Cheesy Zucchini Lasagna only costs $15 to prepare, which helps me stay on budget and makes my weeknights a little bit easier. 

In addition to being extremely delicious, this lasagna is gluten-free, low-carb, and packed with fresh veggies! But don’t worry—it still has that hearty, cheesy lasagna flavor that we all know and love! Not bad for $15, right?!

HOW TO MAKE ZUCCHINI LASAGNA

Here’s everything you need to make this cheap, healthy lasagna!

Start by slicing the zucchini lengthwise into thin slices. Feel free to slice them as thin or thick as you’d like. To make your zucchini less watery, add a little salt to your zucchini slices and let them sit for about 15 minutes. Salt draws the water out of the zucchini making it less watery when prepared. Blot with a paper towel and set aside.

Next, it’s time to make the sauce. Heat a large pan over medium heat and add in a couple of tablespoons of oil. Sauté your onions and garlic until fragrant. 

Add in the ground beef, making sure to break down the ground beef into small pieces while cooking. When the meat is fully cooked, reduce the heat to low and add in the mushrooms and tomato sauce. Season with garlic powder, Cajun seasoning, and salt/pepper to taste.

Stir and let simmer for about 5 minutes. Once the sauce is done, it’s time to layer the lasagna.

To layer, cover the bottom of the casserole dish with a layer of zucchini slices, then spread half of the sauce on top followed by half of the mozzarella cheese. Repeat these layers one more time and top with the remaining cheese.

Cover with foil and bake at 400 degrees F for about 40 minutes. Then uncover and let it broil for 5 minutes to get a nice golden-brown top. Garnish with fresh parsley and serve!

Ingredients

  • 4 large zucchinis
  • 2 tablespoons olive oil
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 pound ground beef
  • 8 ounces mushrooms chopped
  • 2 teaspoons garlic powder
  • 1 teaspoon Cajun seasoning
  • 16 ounces tomato sauce
  • 1 cup shredded mozzarella cheese
  • Salt/pepper to taste

Instructions
