Most chopped sandwiches include iceberg or romaine lettuce, but I decided to switch things up a little bit and use arugula instead. Arugula is the star of this Chopped Sandwich for several reasons. Not only does it add a peppery, slightly bitter flavor that complements the other ingredients perfectly, but it also packs a nutritional punch. Arugula is rich in vitamins A, C, and K, as well as folate, calcium, and potassium. It’s a nutrient-dense choice that elevates the taste and health benefits of your sandwich.
