How to Make Salmon Tacos 

  • Prepare the Sweet Pepper Salsa: In a medium bowl, combine the sweet peppers, tomato, onion, cilantro, lime juice and salt & pepper. Mix well and set aside.
  • Season the Salmon: Season the salmon filets with dried parsley, cumin, and garlic powder.
  • Cook the Salmon: Add the olive oil to a large skillet and heat over medium heat. Add the salmon and cook for about 4-5 minutes, then flip and cook an additional 4-5 minutes or until cooked through.
  • Flake the Salmon: When the salmon is done, flake with a fork into medium-sized pieces.
  • Assemble the Tacos: Add a serving of salmon to each tortilla, then top with the Sweet Pepper Salsa, crumbled feta, and more cilantro for garnish. Enjoy!

Salmon Tacos with Sweet Pepper Salsa

Ingredients

  • 1 pound salmon filets
  • 1 teaspoon dried parsley
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil

Sweet Pepper Salsa:

  • 4 red, yellow, or orange mini bell peppers finely chopped
  • 1 tomato diced
  • ½ red onion diced
  • 1/3 cup fresh cilantro chopped
  • Juice of 1 lime
  • Salt/pepper to taste

For Serving:

  • Crumbled feta
  • 8 tortillas
  • Cilantro for garnish

Instructions

  • In a medium bowl, combine all ingredients for the Sweet Pepper Salsa and mix well. Set aside.
  • Season the salmon filets with dried parsley, cumin, and garlic powder.
