Turkey Sausage Over-Stuffed Mushrooms


  • 20 – 24 Baby Bella Mushrooms
  • 1 tbsp corn oil
  • 1 lb ground turkey sausage
  • 1 small onion chopped
  • 1 clove garlic minced
  • 1 orange bell pepper chopped
  • ¼ cup shredded mozzarella
  • Salt/pepper to taste

For Topping:

  • ½ cup crushed buttered round crackers
  • ¼ cup shredded mozzarella


  1. Preheat oven to 350 degrees.
  2. Wash and core about 20-24 baby bella mushrooms. Lay them on a greased baking sheet and set aside.
  3. In a large skillet, on medium heat, add oil onion, garlic, and bell pepper to the skillet. Cook until garlic is fragrant.
  4. Add turkey sausage and cook until done. Be sure to break up sausage while cooking.
  5. Drain off any excess oil and add ¼ cup shredded mozzarella to mixture.

  6. Stuff mushrooms with mixture. Set aside.
  7. Combine crushed crackers and ¼ cup mozzarella cheese and top each mushroom with cracker mixture.
  8. Bake for approximately 10 minutes or until topping is slightly brown.
  9. Serve and Enjoy!
