Preheat your oven to 350°F (175°C). I

In a large mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil. Mix together until the dough is smooth & thick.

Using a cookie scoop or your hands, roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper. Make sure to leave enough space between each cookie to allow for spreading.

Place in the oven and bake for about 10 minutes or until the edges are slightly golden.

Allow the strawberry cookies to cool completely. Meanwhile, melt the milk chocolate chips in a microwave-safe bowl, stirring at 30-second intervals until smooth and velvety.

Take each cookie and dip half of it into the melted chocolate, ensuring a generous coating. As you lift the cookie, let the excess chocolate drip back into the bowl. Place the chocolate-dipped cookies back on the parchment paper and immediately sprinkle them with Valentine's Day-themed sprinkles.
