Ingredients

  • 2 cups unsweetened almond milk
  • 2 scoops unflavored collagen powder
  • ¼ cup unsweetened cocoa powder
  • ⅓ cup creamy peanut butter plus more for serving
  • 1 teaspoon vanilla extract
  • ¼ cup honey
  • Pinch of salt
  • ½ cup chia seeds
  • Fresh raspberries for serving
  • Mini chocolate chips or shaved chocolate for serving
  • Chopped peanuts for serving

Instructions

  • Add almond milk, collagen powder, cocoa powder, peanut butter, vanilla, honey and salt to a large bowl. Whisk thoroughly until the cocoa powder and peanut butter are fully incorporated and the mixture is smooth.
  • Stir in the chia seeds until evenly distributed. Let the mixture stand for 5 to 10 minutes, then stir again to break up any chia seed clumps.
  • Cover and refrigerate for at least 4 hours, or overnight, until thickened.
  • Stir before serving. If the pudding is too thick, add a splash of almond milk until it reaches your desired consistency.
  • Divide among four bowls or jars and top with fresh raspberries, chopped peanuts, mini chocolate chips, shaved chocolate or an extra drizzle of peanut butter.

• If you prefer a sweeter pudding, add an extra drizzle of honey when serving.
• If you prefer a less sweet pudding, start with 2 to 3 tablespoons of honey and adjust to taste.
• For meal prep, divide the mixture into four containers before refrigerating.
