Ingredients

  • ½ cup fresh blueberries
  • ½ cup water
  • ½ teaspoon cinnamon
  • 2 teaspoons maple syrup
  • ½ cup rolled oats
  • ½ cup milk or dairy-free alternative
  • ¼ teaspoon vanilla extract
  • ½ teaspoon salted butter
  • 2 tablespoons peanut butter melted for drizzling

Instructions

  • In a small pot, combine the blueberries, water, cinnamon, and maple syrup. Cook over low heat, breaking apart the blueberries as the sauce heats up. Continue cooking until it reaches the desired consistency.
  • In a small saucepan, bring the milk to a gentle boil. Stir in the oats, vanilla, and butter. Reduce heat, and let simmer for about 5 minutes, stirring occasionally, until the oats are creamy and tender.
  • Transfer the oatmeal to a bowl, top with the blueberry sauce, and drizzle with melted peanut butter.
  • Top with fresh blueberries, and additional maple syrup if desired.
  • Serve warm and enjoy.
