Ingredients

  • 1 cup old fashioned oats
  • ¼ cup honey
  • ¼ cup peanut butter
  • ¼ cup mini chocolate chips
  • ¼ cup dried cranberries
  • 2 tbsp flax seeds
  • 1 tsp vanilla
  • 1 cup white chocolate morsels
  • 1 tbsp coconut oil
  • 2 tsp lemon extract
  • 5-10 drops of red food coloring
  • 5-10 drops of green food coloring
  • 2 tbsp milk chocolate chips for pupils
  • 3 wooden skewers

Instructions

  • Place oats, honey, peanut butter, mini chocolate chips, dried cranberries, flax seeds, and vanilla in a medium bowl and stir to combine well. The mixture should be a bit sticky.
  • Refrigerate for at least 30 minutes.
  • Using a small scoop or tablespoon, scoop mixture into your hand and roll into a ball. Repeat with remaining mixture.
  • It helps to slightly wet hands when rolling the balls to prevent mixture from sticking to hands.
  • Refrigerate the balls for about an hour.
  • When balls are firm, melt white chocolate in a small microwave safe bowl for about 1 minute or until melted. Stir in coconut oil.
  • Dip each ball in the white chocolate mixture and set on parchment paper to set. Place in refrigerator to make sure the white chocolate has completely set.
  • Take 2 small bowls, and add red food coloring to one and greed food coloring to the other. Add a teaspoon of lemon extract to each bowl and feel free to add a few more drops of food coloring to reach desired concentration.
  • Using 2 wooden skewers, draw green circles on the top of each ball and red “veins” extending from the green eyes.
  • Melt milk chocolate chips in a small, microwave safe bowl for about 1 minute.
  • Using a wooden skewer, place a dot in the center of each green circle to make pupils.
  • Keep eyeballs stored in the refrigerator until ready to serve.
  • Enjoy!
