Summer Pasta Salad with Whole Wheat Pasta

Ingredients

For the pasta salad:

  • 1 lb whole wheat rotini pasta cooked & drained
  • 2 cups grape tomatoes sliced in half
  • 2 ½ cups baby arugula
  • 1 orange bell pepper thinly sliced
  • ½ red onion diced
  • 1/3 cup crumbled feta plus more for serving

For the lemon vinaigrette:

  • ½ cup extra virgin olive oil
  • 2 tablespoons Dijon mustard
  • 1-2 teaspoons honey depending on your preference
  • 2 tablespoons apple cider vinegar
  • Juice of 2 lemons
  • 2 cloves garlic minced or pressed
  • Salt/pepper to taste

Instructions

  • To make the dressing: In a small bowl, whisk together the olive oil, Dijon mustard, honey, apple cider vinegar, lemon juice, garlic, and salt/pepper to taste. Set aside.
  • To assemble the pasta salad: In a large bowl, add in the pasta, tomatoes, arugula, bell peppers, onions, and feta.
  • Pour the vinaigrette over the pasta salad and toss to combine. You can serve this at room temperature, or chill in the fridge for 3 hours for best flavor.
