Now that the weather is getting a little cooler, it’s time to break out all of those warm and cozy recipes! I can’t explain it, but it’s something about the Fall season that makes me crave soup, pumpkin spice lattes, and yummy breakfast meals such as this Berry Cream Cheese Stuffed French Toast!
I’ve always been a huge fan of French Toast, but after making this recipe—I think I’m officially obsessed! What makes this Stuffed French Toast recipe so amazing is the sweet, creamy filling accompanied by a burst of sweet & juicy Oregon raspberries and blackberries! Can you say delicious?!

How to Make Stuffed French Toast
In a large bowl, whisk together eggs, milk, vanilla, and cinnamon until well combined. Dip both sides of the bread in the egg mixture until it begins to soak into the bread. Place the bread on a buttered grill or skillet and grill, on med-high heat, and cook until golden brown. Make sure to flip bread so that it cooks evenly on both sides.
While the French Toast is cooking, start putting together your cream cheese filling. In a medium bowl, combine the cream cheese and sugar until creamy. Next, fold in the thawed Oregon raspberries and blackberries.
When the French Toast is done, spread a layer of the cream cheese mixture on one side of the French toast and add another slice of French toast on top to make a sandwich. Sprinkle with a little powdered sugar, if desired, and serve with warm maple syrup. Yum!!

Berry Cream Cheese Stuffed French Toast
Ingredients
- 8 slices Texas Toast
- 3 eggs
- ¾ cup milk
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla
- Butter for grill or skillet
Berry Cream Cheese Filling
- 8 ounces cream cheese spread
- 3 tablespoons sugar
- 1 cup frozen Oregon raspberries & blackberries warmed
Instructions
- In a large bowl, whisk together eggs, milk, vanilla, and cinnamon until well combined. Heat a buttered grill or skillet on medium-high heat, and dip both sides of the bread in the egg mixture until it begins to soak into the bread. Place the bread on the grill or skillet and grill, and cook until golden brown. Make sure to flip bread so that it cooks evenly on both sides.
- To make the berry cream cheese filling, combine the cream cheese and sugar until creamy. Next, fold in the warmed Oregon raspberries and blackberries.
