Busy weekday mornings can get hectic very quickly, which is exactly why I love having these Turkey Sausage Breakfast Burritos already made and ready to go!

These Turkey Sausage Breakfast Burritos have become one of those recipes that just makes our week run a little smoother. They’re hearty, flavorful, and filled with fluffy scrambled eggs, savory turkey sausage, crispy roasted potatoes, and plenty of cheese, all wrapped inside a warm flour tortilla.

My kids love grabbing one for breakfast before school, and my husband can easily heat one up and take it with him on his way out the door. On those mornings when everyone seems to be going in a different direction, having a batch of breakfast burritos waiting in the refrigerator means there’s one less thing for me to think about. That alone makes them worth adding to my weekend meal-prep routine!

I usually make a batch at the beginning of a busy week, keep a few in the refrigerator and freeze the rest. Then everyone can simply reheat one whenever they need a quick breakfast. These are exactly the kinds of recipes I love because a little preparation ahead of time can make the rest of the week feel so much easier.
And unlike some grab-and-go breakfasts that leave you looking for something else an hour later, these burritos contain a combination of protein, carbohydrates and fat that makes them feel like a substantial breakfast.

How to Make Turkey Sausage Breakfast Burritos
These burritos do have a few separate components, but they are all very simple to prepare.
1. Roast the potatoes.
Preheat the oven to 425°F. Cut the potatoes into small pieces so they cook quickly and evenly. Toss the potatoes with olive oil and Everything Bagel, then spread them onto a baking sheet in a single layer. Roast for about 20 to 25 minutes, tossing halfway through cooking, until the potatoes are tender and golden.

2. Cook the turkey sausage.
While the potatoes roast, heat a large skillet over medium heat. Add the ground turkey along with a little olive oil if needed. Sprinkle with Everything Bagel Seasoning, garlic powder, and salt/pepper to taste. Cook for approximately 7 to 9 minutes, breaking the turkey into small crumbles as it cooks. Continue cooking until the turkey reaches an internal temperature of 165°F. Transfer the turkey to a plate and set aside.
3. Scramble the eggs.
Reduce the skillet heat to medium-low. Add the eggs and salt/pepper to taste. Gently scramble until the eggs are just set. Try not to overcook them, especially if you plan to refrigerate or freeze your breakfast burritos because the eggs will cook slightly more when reheated.
4. Assemble your breakfast burritos.
Lay the tortillas on a clean work surface. Divide the roasted potatoes, turkey sausage, scrambled eggs and shredded cheese evenly among all 8 tortillas. Place the filling slightly below the center of each tortilla.
5. Roll the burritos.
Fold both sides of the tortilla inward over the filling. Then bring the bottom of the tortilla up and over the filling and roll tightly until completely closed.
That tight roll is especially important if you’re making freezer breakfast burritos because it helps keep everything contained during storage and reheating.

The Perfect Breakfast for Meal Prep
This is probably my favorite thing about this recipe. Making breakfast every morning sounds great in theory, but real life sometimes has other plans! Between getting the kids ready, checking backpacks, finding whatever mysteriously disappeared overnight, and trying to get everybody out of the house on time, mornings can get busy! That’s why I love having a batch of these in the refrigerator.

How to Meal Prep Breakfast Burritos
For the best results, let all of the cooked ingredients cool before assembling the burritos. This step is important. Wrapping steaming-hot eggs, potatoes and turkey inside a tortilla traps moisture, which can leave your tortillas soggy after refrigeration.
Once your ingredients have cooled slightly:
- Assemble and roll each burrito.
- Wrap each one individually in parchment paper or foil.
- Place refrigerated burritos in an airtight container or resealable bag.
- Label frozen burritos with the recipe name and date.
- Refrigerate the ones you’ll eat soon and freeze the extras.

How Long Do Breakfast Burritos Last in the Refrigerator?
Store prepared breakfast burritos in the refrigerator for approximately 3 to 4 days. Make sure they cool before wrapping and refrigerate them promptly after preparation.
If you’re making these for a full week, I recommend refrigerating enough for the first few days and freezing the rest. That way you get the convenience of meal prep without keeping cooked eggs and meat in the refrigerator longer than necessary.

Can You Freeze Breakfast Burritos?
Absolutely! These make excellent freezer breakfast burritos. Allow the cooked fillings to cool, assemble the burritos and wrap each one individually. You can wrap them in parchment paper followed by foil or place the individually wrapped burritos inside a freezer-safe bag.
Freeze for approximately 2 to 3 months for the best quality. Be sure to label and date your container or freezer bag so you know what’s inside.

How to Reheat Breakfast Burritos
From the Refrigerator
Remove any foil before microwaving. Place the burrito on a microwave-safe plate and microwave for approximately 1 to 2 minutes, turning halfway through if needed. Because microwave strengths vary, adjust the time as needed until the center is hot.
From Frozen
For the best texture, you can move a frozen burrito to the refrigerator the night before and let it thaw overnight. If reheating directly from frozen, remove the foil and microwave in intervals until heated completely through. Frozen breakfast burritos may take approximately 2½ to 4 minutes, depending on the size of the burrito and your microwave.
Air Fryer
For a slightly crisp tortilla, reheat a thawed burrito in the air fryer at approximately 350°F for 5 to 8 minutes, or until warmed through.
Oven
You can also reheat foil-wrapped burritos in a 350°F oven until the center is hot. This method takes longer, but it gives the tortilla a nice texture.

Tips for the Best Meal Prep Breakfast Burritos
Let the fillings cool.
This may be the most important meal-prep tip. Hot fillings create steam, and steam creates soggy tortillas.
Don’t overcook the eggs.
Cook them just until set. They will continue cooking slightly during reheating.
Dice the potatoes small.
Small pieces cook faster and make the burritos easier to roll and eat.
Don’t overfill the tortillas.
It’s tempting to pack as much filling as possible inside, but overfilled burritos are much harder to roll.
Warm your tortillas before rolling.
If your tortillas feel stiff, microwave them for about 10 to 15 seconds. Warm tortillas are more flexible and less likely to tear.
Wrap each burrito individually.
This makes it easy for everyone in the family to grab exactly what they need.

Easy Breakfast Burrito Variations
One of the best things about breakfast burritos is how easy they are to customize.
Add Vegetables
Try adding:
- Bell peppers
- Spinach
- Mushrooms
- Onions
- Tomatoes
- Zucchini
Cook vegetables before adding them so they don’t release excess moisture inside the burrito.
Add Beans
Black beans can add additional fiber and plant-based protein.
Change the Cheese

Add Some Heat
Try diced jalapeños, green chiles or your favorite hot sauce.
Serve With Salsa
I prefer keeping salsa outside of the burrito when meal prepping because the extra moisture can make the tortilla soggy. Simply serve it on the side after reheating.

Ingredients
For the Roasted Potatoes:
- 1 pound baby Yukon Gold or red potatoes diced into ½-inch pieces
- 1 tablespoon olive oil
- 1 teaspoon Everything Bagel Seasoning
For the Breakfast Burritos:
- 1 pound ground turkey
- 1 tablespoon olive oil if needed
- 1½ teaspoons Everything Bagel Seasoning
- 8 large eggs
- 1 teaspoon garlic powder
- 8 large flour tortillas
- 1½ cups shredded cheddar or Mexican-blend cheese
- salt/pepper to taste
Instructions
- Preheat the oven. Preheat oven to 425°F.
- Prepare the potatoes. Toss potatoes with 1 tablespoon olive oil and 1 teaspoon Everything Bagel Seasoning. Spread the potatoes in an even layer on a baking sheet. Roast for 20 to 25 minutes, tossing halfway through cooking, until tender and golden brown. Set aside.

- Assemble the burritos. Lay tortillas on a clean work surface. Divide the roasted potatoes, turkey sausage, scrambled eggs and cheese evenly among the tortillas, placing the filling slightly below the center.
- Fold both sides of the tortilla inward. Fold the bottom over the filling, then tightly roll upward to form a burrito.
- Serve or store. Enjoy immediately or allow the burritos and fillings to cool before individually wrapping them for refrigerator or freezer storage.
