Spring is almost here, and I couldn’t be more excited! Even though I love cool weather and playing in the snow, I get excited when the temperatures start to rise and the beautiful flowers start to bloom. My kids are also looking forward to warmer weather because that means long nature walks, followed by cool treats for dessert.

And what better way to cool off than with a big slice of this Assorted Berry Ice Cream Pie? It’s chilled and packed full of sweet, spring-inspired flavors that are sure to satisfy your taste buds on a warm spring day. Ice cream pies are always delicious – but this Assorted Berry Ice Cream Pie really is absolutely amazing, thanks to a few special ingredients that I picked up from Publix.

I love shopping at Publix because they always have such amazing deals, especially during their “Cool Foods for Families” promotion which is going on right now through 3/25/22! The “Cool Foods for Families” promotion allows you to save big on some of your favorite refrigerated, frozen, and dairy items. I was able to pick up a few key items that I needed for Berry Ice Cream Pie at a really great price, including the Earth Balance Spread (2 for $6), Reddi Wip (2 for $5), and Tillamook Ice Cream (2 for $9).

One of the main reasons that I love this ice cream pie is because it requires so few ingredients, and it’s super easy to make! It contains all of those delicious spring flavors spread into a delicious buttery pie crust and topped with fresh berries.


How to Make a Berry Ice Cream Pie

Start by preheating the oven to 325°F. In a large bowl, combine the graham cracker crumbs, sugar, and melted butter. Dump the mixture into a 9½ inch pie plate. Press it into the bottom and a little more than halfway up the sides of the pie dish. Bake for 8-10 minutes, until golden, and set aside to cool to room temperature. When cool, transfer to the freezer for about one hour.

Remove the crust from the freezer and fill it with scoops of ice cream. Place ¼ cup of the berries in a small bowl and mash them with a fork. Fold in the mashed berries and cover the pie with aluminum foil. Place it in the freezer for at least 2 hours or until the filling is firm. Before serving, allow the pie to sit at room temperature for at least 10 minutes to slightly soften. Top with the remaining berries and add a dollop of Reddi Wip Extra Creamy to each slice. Enjoy!

Ingredients

  • 1 ½ cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 6 tablespoons Earth Balance Spread melted

Filling:

  • 3 cups Tillamook Vanilla Ice Cream softened
  • ¼ cup fresh strawberries sliced
  • ¼ cup fresh blueberries
  • ¼ cup fresh blackberries
  • ¼ cup fresh raspberries
  • Garnish: Reddi Wip Extra Creamy

Instructions
