Apple Roasted Herb Chicken

I love roasted chicken, but letโs be honest, sometimes roasted chicken can be a bit boring! This Apple Roasted Herb Chicken is soooo far from boring! The flavors of the apples and herbs seasoned the chicken perfectly, making this the BEST roasted chicken recipe ever!!

So in our house, of course we have the traditional turkey, dressing, sweet potato pie, etcโฆ.but when the whole family gets together, we like to have a variety of food! Someone might bring pasta, or enchiladas, or fried fish! Lol! In addition to the turkey and ham, we normally have chicken. This year, I decided to take on the responsibility of making the chicken and I added a DELICIOUS spin on it! This dish was also very easy to make!
I literally threw everything in my favorite, large cast iron skillet ย ย 15-Inch Pre-Seasoned Cast-Iron Skillet and put it in the oven! I make everything in that skillet! Lol! Apple Roasted Herb Chicken
Ingredients
- 6 leg quarters
- 1 tbsp olive oil
- 4 fresh rosemary sprigs
- 1 tsp fresh thyme and 3 additional sprigs
- 1 cup sliced red apples
- 1 cup purple onion coarsely chopped
- 2 tbsp seasoning salt
- 1 tbsp garlic powder
- 1 tsp poultry seasoning
- 1 tbsp black pepper
- ยฝ cup water
Instructions
- Preheat oven to 375 degrees.
- Place chicken leg quarters in a large black cast iron skillet. Drizzle chicken with olive oil and season front/back of chicken with 1 tsp of thyme, seasoning salt, garlic powder, poultry seasoning, and black pepper.
- Arrange apples, onion, rosemary, and thyme sprigs around seasoned chicken.
- Add water and place in oven.
- Bake for about 1 hour and 20 minutes or until chicken is thoroughly cooked.
- When done, remove from oven and let settle for about 5-10 minutes before serving.
- Enjoy!
