I love roasted chicken, but let’s be honest, sometimes roasted chicken can be a bit boring! This Apple Roasted Herb Chicken is soooo far from boring! The flavors of the apples and herbs seasoned the chicken perfectly, making this the BEST roasted chicken recipe ever!!

I can hardly contain my excitement! ? Thanksgiving brings so many good memories! For me, it’s more than a holiday of great food…it’s a time to be thankful for the wonderful friends and family in my life! But don’t get me wrong, I look forward to stuffing my face with all of the delicious food and taking a much-needed nap afterwards! Lol!

So in our house, of course we have the traditional turkey, dressing, sweet potato pie, etc….but when the whole family gets together, we like to have a variety of food! Someone might bring pasta, or enchiladas, or fried fish! Lol! In addition to the turkey and ham, we normally have chicken. This year, I decided to take on the responsibility of making the chicken and I added a DELICIOUS spin on it! This dish was also very easy to make!

I literally threw everything in my favorite, large cast iron skillet     15-Inch Pre-Seasoned Cast-Iron Skillet and put it in the oven! I make everything in that skillet! Lol! I may be a bit biased, lol, but it was really good! I’ve always loved anything roasted with apples, but those recipes were usually sweet! I’ve had apple smoked bacon, but I didn’t really count that because, let’s be honest, you can add anything to bacon and it’ll still be good! Lol! I wanted to play around with a few flavor components and I feel like I hit the jackpot with this combination! In this recipe, you would think that the apples would be too sweet to pair with the chicken, but once everything cooks together, the apples take on the flavors of the herbs and onion, making it truly a one-of-a kind dish!

Apple Roasted Herb Chicken

Ingredients

  • 6 leg quarters
  • 1 tbsp olive oil
  • 4 fresh rosemary sprigs
  • 1 tsp fresh thyme and 3 additional sprigs
  • 1 cup sliced red apples
  • 1 cup purple onion coarsely chopped
  • 2 tbsp seasoning salt
  • 1 tbsp garlic powder
  • 1 tsp poultry seasoning
  • 1 tbsp black pepper
  • ½ cup water

Instructions

  • Preheat oven to 375 degrees.
  • Place chicken leg quarters in a large black cast iron skillet. Drizzle chicken with olive oil and season front/back of chicken with 1 tsp of thyme, seasoning salt, garlic powder, poultry seasoning, and black pepper.
  • Arrange apples, onion, rosemary, and thyme sprigs around seasoned chicken.
  • Add water and place in oven.
  • Bake for about 1 hour and 20 minutes or until chicken is thoroughly cooked.
  • When done, remove from oven and let settle for about 5-10 minutes before serving.
  • Enjoy!
