This drink is made with such nutritious, energy-boosting ingredients that will instantly perk you up and have you feeling great! And guess what…it’s only 97 calories!!

Okay guys, I had the most AMAZING weekend!! It was the weekend of our annual Ugly Christmas Sweater Party! My husband and I LOVE to host parties and we look forward to it every year! This year was our 4th annual party and as always, we had a blast!! It’s always fun spending time with friends and family during the holidays!

When planning our parties, the menu is the absolute, most important component! We usually test out a few recipes a couple of months before and of course, we test several drink recipes! My husband prides himself of putting together the PERFECT drink concoction! This year he made the famous Blu Juice ? and Jingle Juice! They were both so good and very dangerous! Let’s just say we had a few people to sleep over after the party…Lol!! The next day, I woke up feeling ‘blah.’ I had a headache and a stuffy nose, so I whipped up a this Revitalizing Super Energy Drink!

This drink was super easy to make and it features a few of my fave fruits/veggies…persimmon and carrots! I love using persimmon and carrots in my recipes because they provide so many wonderful health benefits! Persimmons are rich in vitamins and minerals that can help boost your immune system, and we all know that carrots contain a healthy amount of beta-carotene which can improve your eye health! Both also provide a good amount of fiber which is great for a healthy digestive system! I started off by boiling all of the ingredients is a small pot.

After I brought the ingredients to a boil, I reduced the heat to low and let it cook for a few more minutes. When the persimmon and carrots were tender, I removed the pot from the heat and allowed it to cool. When it was cool, I added it to my blender Ninja Professional Blender with Nutri Ninja Cups, and pulsed until smooth. And there you have it; a delicious feel better (hang-over relief ?) drink!

I love to put this drink in the fridge and enjoy it when it’s nice and cold! It’s so delicious and made without any added sugar! Y’all this drink had me feeling better instantly! I felt so good, that I started cleaning the house and wrapping gifts! Lol! Try it for yourself and say good-bye to those canned energy drinks!

Revitalizing Super Energy Drink

Ingredients

  • 1 ½ cups water
  • 1 persimmon top removed, cut into fourths
  • 1 carrot sliced
  • 3-4 sprigs of thyme
  • 1 tablespoon of lemon juice
  • 1 tbsp honey

Instructions

  • Add all ingredients to a small pot and on medium-high heat, bring ingredients to a boil.
  • Once mixture reaches a boil, reduce heat to low and let cook until persimmon and carrots are tender.
  • Remove from heat and cool.
  • When mixture is cool, add to blender and blend until smooth.
  • Pour into glass and enjoy immediately or place in the refrigerator to enjoy later!
