I’ve been a huge fan of smoothie bowls lately! I can’t explain it, but I love adding my favorite toppings (or anything that I have in the pantry) and taking the time to enjoy every spoonful! Smoothies are one of my quick, on-the-go, breakfast options! I can prep the ingredients the night before, add them to my blender in the morning, and go! (By the way, this is the blender that I use Ninja Professional Blender with Nutri Ninja Cups ).
Even though I LOVE creamy smoothies, they don’t always love me back! Consuming a lot of dairy in the morning gives me an upset stomach and causes all sorts of issues! Lol! I wanted to find a way to enjoy yummy, creamy smoothies without all of the drama….so I started experimenting with a few creative recipes!
Of course, there’s always the option to use cashew, almond, coconut milk, etc…but I didn’t have any of those items on hand. I only had a gallon of whole milk in the fridge (for my 1 year old), and I definitely wasn’t about to use that! Lol! I had a bag of almonds on the counter and thought, why not? I wanted to omit the dairy, but I didn’t want to compromise the amount of protein. I added some kale, a pear, flax seed meal, water, agave nectar and almonds to my favorite blender, Ninja Professional Blender with Nutri Ninja Cups , and blended all of the ingredients until smooth! The texture and taste were AMAZING!! You’d swear I added milk or yogurt! Try it for yourself!
Vegan Creamy Pear and Kale Smoothie Bowl
Ingredients
- 1 cup fresh kale stems removed
- 1 pear core removed and sliced
- 1 oz raw almonds
- 2 tbsp flax seed meal
- 2 tsp agave nectar (or honey)
- 1 cup water
Instructions
- Add all ingredients to blender and blend until smooth and creamy. This may take a few cycles to ensure that the almonds are thoroughly blended.
- You may add additional water if you would like a thinner texture.
- Pour in a bowl and top with your favorite toppings.
- Enjoy!
