Happy Taco Tuesday y’all!!! As you can see, it doesn’t take much to get me excited! Lol! I try to find any reason to celebrate and have fun, so Taco Tuesday has become a tradition!

I love getting creative in the kitchen and coming up with different taco combinations! Last year, I came up with the idea to make shrimp and fish tacos and they were amazing! We love making seafood tacos, but this time I wanted to try something a little different…

I decided to make these Marinated Flank Steak Street Tacos! I got the idea after watching one of my favorite shows, Diners, Drive-Ins & Dives! I just love that show! On this one particular episode, Guy Feri was visiting a popular taco restaurant and they had the most amazing steak street tacos! I just had to recreate them!

Surprisingly, I‘ve never made steak tacos! I’m not sure why…maybe it’s because I can never seem to get my steak really tender. It always comes out a little tough! To fix this issue, I decided to marinate my flank steak for a few minutes to help break down some of that tough connective tissue.

That trick worked perfectly! My steak was tender, juicy, and very flavorful! I grilled my tortillas to get them nice and golden, which added the perfect touch! I also added some fresh toppings, and crumbled feta on top for the finishing touch! AH-MAZE-ING!!

Marinated Flank Steak Street Tacos

Ingredients

  • 2 lbs flank steak
  • 6 small tortillas
  • 2 tbsp olive oil
  • Lime juice about the juice of 1 lime
  • 1 and ½ tsp taco seasoning
  • Salt/pepper to taste
  • 1 tsp fresh dill minced

Optional Toppings:

  • ½ cup crumbled feta reduced fat
  • Romaine lettuce shredded
  • Sliced grape tomatoes
  • Diced onions
  • Sliced jalapenos

Instructions

  • In a small bowl, add lime juice, 1 tbsp olive oil, 1 and ½ tsp taco seasoning, 1 tsp of dill, and salt/pepper to taste. Add flank steak and refrigerate for about 30 minutes.
  • Heat a cast iron skillet or grill on high and add 1 tbsp of olive oil. Remove the steak from marinade and place it on the hot skillet/grill for about 4-5 minutes then flip and cook another 4-5 minutes for medium rare. Or until desired doneness.
  • Let steak rest for about 10-15 minutes. Slice in thin slices against the grain and place on the tortillas. Top with feta, lettuce, tomatoes, onions, & jalapenos if desired!
  • Serve and Enjoy!
