Slice & Bake Peppermint Almond Shortbread Cookies

How could anyone resist these tender, buttery shortbread cookies flecked with peppermint, almonds, and dipped in chocolate?! These Slice & Bake Peppermint Almond Shortbread Cookies are made with mostly organic ingredients and will quickly become a holiday favorite!

The holiday season is such a busy time of year, but this year I’m all about simplifying things, which includes holiday baking. I started prepping a few months ago by making and freezing several kinds of dough including these Slice & Bake Peppermint Almond Shortbread Cookies.
These Slice & Bake Peppermint Almond Shortbread Cookies are super easy to make. I picked up all of my ingredients from Sprouts Farmers Market! I loved that they had a large variety of organic baking ingredients, so I was able to get everything that I needed including some organic almonds from the Bulk Department at Sprouts. Buying in bulk is one of the many ways to save at Sprouts. It helps reduce food and packaging waste, and the ingredients are always fresh!
These Slice & Bake Peppermint Almond Shortbread Cookies bake up crisp around the edges with a soft, buttery center that includes the perfect amount of crushed peppermint candy and chopped almonds! Yum! Once the cookies cooled, I dipped half of them in white chocolate and the other half in milk chocolate. I topped them with additional crushed peppermint and chopped almonds! They were sooo good!

Slice & Bake Peppermint Almond Shortbread Cookies
Ingredients
- 1 cup of all-purpose flour
- ¼ cup organic cane sugar
- 1 stick organic unsalted butter chilled & cut into cubes
- ¼ tsp salt
- ¼ cup Sprouts Organic Almonds finely chopped and additional for garnish
- 2 tsp Sprouts Organic Vanilla extract
- 3 tbsp crushed peppermint and additional for garnish
- 1 drop of peppermint extract
- ½ cup white chocolate morsels
- ½ cup milk chocolate morsels
Instructions
- In a large bowl, combine flour, sugar, and salt. Add flour mixture and butter to a food processor or blender and pulse until all ingredients are combined. Add in vanilla extract and 1 drop of peppermint extract and pulse until mixture is
crumbly. Be sure not to overmix. - Add ingredients back to bowl and fold in almonds and crushed peppermint.
- Transfer cookie dough onto a floured surface. Knead and roll dough into a log. Cover with plastic wrap and refrigerate for approximately one hour.
- After about an hour, preheat oven to 325 F and line a cookie sheet with parchment paper. Slice cookies and arrange on cookie sheet.
- Bake for 14-16 minutes or until bottom and edges are lightly golden. Cook on a wire rack.
- Melt white chocolate morsels and milk chocolate morsels in the microwave, separately, for about 2 minutes. Make sure to stir about every 30 seconds. Dip the cookies into the melted chocolate, and sprinkle with additional chopped almonds and crushed peppermint, if desired.
- Allow chocolate to set before serving.
