Happy New Year, y’all!!! Wow!!! I can’t believe that it is actually 2020! Last year, I made it my mission to make life easier and less chaotic, so I decided to keep that going in 2020!! My entire family LOVES meatballs, so I “healthified” their favorite food and created this AMAZING masterpiece ?. The best thing about this recipe is that it only requires you to use one pot!! This is absolutely perfect because I truly despise washing dishes! I hate having to use 3-4 pots for one recipe so this recipe is right up my alley!

HOW TO MAKE ZUCCHINI & BUTTERNUT SQUASH NOODLES

You can use a spiralizer, such as THIS ONE. Simply place your zucchini and butternut squash on the base of the spiralizer and twist the knob. On the other side, you’ll end up with perfect veggie noodles! I love just love this Ultimate Veggie Spiralizer because it works great and it’s inexpensive!

We’ve been eating veggie noodles for a while. The kids love them and it’s a great way to add in a few extra veggies! They are so versatile and can be enjoyed cooked or raw…it’s totally your preference.

Once your veggie noodles are prepped, set them aside and start working on the meatballs. These meatballs were super easy to make! I just combined ground turkey, onions, garlic, crushed crackers, an egg, Worcestershire sauce, low sodium soy sauce, and seasonings in a large bowl. For each meatball, I grabbed about 2 tablespoons of the ground turkey mixture and rolled it into a ball with the palms of my hand.

Next, heat a skillet over medium-high heat. When hot, add 2 tablespoons of oil and work in batches to add the meatballs. Cook on all sides until fully browned and cooked throughout; this may take about 10 minutes. When done, remove the meatballs from the pan with a slotted spoon and allow them to cool.

Reduce the temp to low, and add water, a little sugar and additional Worcestershire sauce and soy sauce to the skillet. Let simmer for about 5 minutes before adding the meatballs and veggie noodles back to the skillet. Toss and serve!

Ingredients

  • 2 lbs ground turkey
  • 2 tbsp oil
  • 1 small yellow onion finely chopped
  • 3 cloves garlic minced
  • ½ tsp seasoned salt
  • ¼ cup crushed butter crackers
  • 1 large egg lightly beaten
  • 6 tbsp low sodium soy sauce
  • 5 tbsp Worcestershire sauce
  • ½ cup water
  • 1 tsp sugar
  • 2 and ½ cups zucchini noodles
  • 2 and ½ cups butternut squash noodles
  • Salt/pepper to taste

Instructions

  • In a large bowl, combine ground turkey, onions, garlic, crushed crackers, 1 egg, 2 tbsp of Worcestershire sauce, 1 tbsp of low sodium soy sauce, seasoned salt, and salt/pepper. For each meatball, grab about 2 tablespoons of the ground turkey mixture and roll it into a ball with your palms.
  • Next, heat a large skillet over medium-high heat. When hot, add 2 tablespoons of oil and work in batches to add the meatballs. Cook on all sides until fully browned and cooked throughout; this may take about 10 minutes. When done, remove the meatballs from the pan with a slotted spoon and allow them to cool.
  • Reduce the temp to low, and add ½ cup water, 1 tsp of sugar, 4 tbsp of Worcestershire sauce, and 4 tbsp of soy sauce to the skillet. Let simmer for about 5 minutes. Add the meatballs and zucchini/butternut squash noodles to the skillet and toss until all ingredients are coasted evenly with sauce. Cook until the vegetable noodles have softened, or until they are cooked until your desired texture.
  • Serve and Enjoy!
