Simple Lemon Berry Greek Yogurt Parfait

Do you have a special “go-to” breakfast that you like to prepare on those busy mornings?? Most people will agree that cereal or a protein bar is a quick and easy option, but I beg to differ! My easy breakfast of choice is a yogurt parfait!
Yogurt parfaits are an insanely easy breakfast made by layering granola with yogurt and fresh fruit, and maybe even a drizzle of honey for a little added sweetness. I love to come up with different parfait combos, and since blackberries and raspberries happen to be a couple of my favorite fruits, I decided to make a Simple Lemon Berry Greek Yogurt Parfait!
I love using Oregon Berries in my recipes because it adds just the right amount of sweetness and so much nutritional goodness too!

SIMPLE LEMON BERRY GREEK YOGURT PARFAIT
When making this Simple Lemon Berry Greek Yogurt Parfait, you can choose to layer the ingredients any way you want, but I like to start with the granola because it gives the parfait a sturdy base. I like to use vanilla or honey flavored granola made from oats and nuts, but any granola will work for this parfait recipe.
My next layer included a lemon infused vanilla Greek yogurt. I know that may sound a little fancy, but it’s just vanilla Greek yogurt mixed with a little freshly squeezed lemon juice. The lemon really brings out the flavors of the yogurt and pairs well with the other ingredients.
Now it’s time to add the fruit. I chose to use thawed Oregon blackberries and raspberries. I simply added a few raspberries, another layer of yogurt and then a layer of blackberries. For a little added pizazz, I garnished the parfait with a tiny lemon wedge and fresh mint! Yum!
This Simple Lemon Berry Greek Yogurt Parfait was absolute perfection! I loved the combination of the tart berries and the sweetness from the yogurt and the granola. These parfaits are not only delicious but full of protein and wholesome ingredients. It’s the perfect way to start the day!
Simple Lemon Berry Greek Yogurt Parfait
Ingredients
- 1 cup granola
- 1 and ½ cups vanilla Greek yogurt
- 1 cup frozen, thawed Oregon blackberries
- ½ cup frozen, thawed Oregon raspberries
- Juice of one lemon
- Fresh mint & lemon wedges for garnish
Instructions
- Combine the yogurt and lemon juice in a small bowl. Set aside.
- Spoon ¼ cup of the granola into each glass. Top with about 1/3 cup of the lemon yogurt and ¼ cup of the raspberries. Spoon another ¼ cup of the granola on top of the berries and add another layer of lemon yogurt. Top each parfait with ½ cup blackberries and garnish with a lemon wedge and fresh mint, if desired.
- Serve immediately and Enjoy!
