Every Wednesday is “Pasta Night” in our home! My family looks forward to this special night because we are true pasta lovers. Usually, our pasta night dishes include tons of cheese and decadent sauces, but this week, I decided to go a slightly healthier route and made this amazing Caramelized Onion & Sun-Dried Tomato Vegan Pasta dish!

This Caramelized Onion & Sun-Dried Tomato Vegan Pasta dish reminds me of a fancy meal prepared in a top-notch Italian Restaurant! The combination of the sun-dried tomatoes and the caramelized onions provides a ton of flavor and will leave your family begging for seconds!

Before preparing this dish, I made a quick trip to Publix to pick up a few items. Thanks to the Plant-Based promotion, I was able to save on several of my favorite plant-based products. To find out which items are on sale, check the savings flyer located in the kiosk at the store’s entrance, or ask customer service for a flyer. Also, be sure to look for signs located on the shelves highlighting the savings during the
promotion.

For this Caramelized Onion & Sun-Dried Tomato Vegan Pasta dish, I picked up onions, kale, Barilla Chickpea Pasta (which is 2 for $5), and Kite Hill Dairy Free Butter (which is 2 for $8). Now that I have all of my ingredients, it’s time to get cooking!

How to Make Caramelized Onion & Sun-Dried Tomato Vegan Pasta

To make this dish, start by preparing your Barilla Chickpea Pasta according to the package directions. When done, set aside.
Next, it’s time to caramelize those onions! Start by heating a skillet to medium-high heat and add in a couple of tablespoons of Kite Hill Dairy Free Butter. Add the sliced onions and stir to coat the onions with the melted butter. Spread the onions out evenly over the pan and let cook, stirring occasionally.

After 10 minutes, sprinkle a little sugar over the onions. The sugar helps with the caramelization
process. Let the onions cook for 15 minutes, stirring every few minutes, or until they become brown.
Reduce heat to low and add in the sun-dried tomatoes and pasta. Toss to make sure that all of the ingredients are combined, and season with garlic powder, oregano, and basil. Remove from heat and top with fresh parsley, if desired. Serve warm, and enjoy!

Ingredients

  • 1 8.8oz package Barilla Chickpea Pasta
  • 3 tablespoons Kite Hill Dairy Free Butter
  • 1 large onion sliced
  • ½ teaspoon sugar
  • 1 cup sun-dried tomatoes
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • Optional: Fresh parsley for garnish

Instructions

  • Prepare the Barilla Chickpea Pasta according to the package directions. When done, set aside.
