Cajun Lightened-Up Grilled Shrimp Po’ Boys

Ingredients

  • 1 lb large shrimp peeled and deveined
  • 1 Tbsp olive oil
  • 1 Tbsp Cajun seasoning
  • 4 hoagie rolls split in half
  • 2 cups shredded romaine lettuce
  • 2 to matoes sliced
  • 1/2 red onion thinly sliced
  • ½ cup dill pickles
  • Optional: 1 tsp chopped fresh parsley
  • For the Tartar Sauce:
  • 1/2 cup fat-free mayonnaise
  • 1 clove garlic minced
  • 2 tablespoons sweet pickle relish
  • 1 large green onion chopped
  • 2 teaspoons red wine vinegar

Instructions

  • In a large bowl, mix together the mayonnaise, garlic, sweet pickle relish, onion, and red wine vinegar. For best results, refrigerate for 1 hour before serving.
  • Preheat grill and add oil to grill. Season shrimp with Cajun seasoning and add to grill in a single layer. Cook for about 2 minutes per side, until shrimp are done and turn opaque. Remove from grill immediately and set aside.
  • Spread tartar sauce on each side of each hoagie roll. Top with lettuce, tomato slices, onions, and pickles.
  • Divide shrimp evenly among the hoagie rolls.
  • Sprinkle with a little chopped parsley, if desired, and enjoy!
