Have you finalized your holiday menu yet?? Usually, I always wait until the last minute but this year I am getting a head start on things! I am proud to say that I have put together my menu with time to spare!
As you all know, I am a ‘sides’ kind of girl! I love a good turkey or ham, but in my opinion the sides make the meal! This year, I’m adding these Ginger Maple Mustard & Herb Roasted Carrots to the menu! I was completely inspired by Colman’s Mustard!
Colman’s Mustard isn’t like any mustard that I’ve tried before! This mustard has a very flavorful and powerful taste that will add a punch of heat to any recipe! I decided to make a delicious marinade for my carrots, so I paired my Colman’s Mustard with maple syrup, ginger, and herbs! I tossed my carrots in this marinade and roasted them in the oven for about 25-30 minutes,or until the carrots are soft but not mushy!
When roasting carrots, I like to cook them until they are soft but still have a little crunch! I am not a huge fan of mushy carrots because it reminds me of my elementary school lunch lol!
These Ginger Maple Mustard & Herb Roasted Carrots were AMAZING! The tangy taste of the mustard really brought out the flavors of this dish! My whole family enjoyed them, and that’s really rare! Whenever I introduce a vegetable recipe to my toddlers, I usually get whining and crying!
This time, I received smiles followed by comments such as,“I like these carrots, mommy!” I guess you can say that these Ginger Maple Mustard & Herb Roasted Carrots were a big hit! Ginger Maple Mustard & Herb Roasted Carrots
Ingredients
- ¼ cup maple syrup
- 1 and ½ tbsp Coleman’s Mustard
- 1 tbsp oil
- 2 tsp ground ginger
- 2 tsp thyme
- 2 lbs whole carrots peeled & sliced in half
- Salt and pepper to taste
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, combine maple syrup, oil, ground ginger, and thyme. Toss in carrots until fully coated with mustard mixture. Season with salt and pepper to taste.
- Spread carrots on a baking sheet and cook for approximately 25-30 minutes, or until carrots are soft but not mushy.
- Serve warm and enjoy!
