How to Make Cheesy Overnight Breakfast Enchiladas
Like all of my budget-friendly recipes, this dish was super easy to make and only required a few simple ingredients that were all under $15! Awesome, right?!
Here’s What You’ll Need:
- Eggs—$1.72
- Flour tortillas—$1.98
- Breakfast sausage—$3.97
- Bell pepper—$0.82
- Shredded shar cheese—$2.22
- Half & half—$2.60
- Onion—already had this ingredient at home
- Ground sage—already had this ingredient at home

Prepare the Filling:
In a large skillet on medium heat, add in the olive oil and the breakfast sausage. Cook until partially done, stirring frequently. Add in the bell peppers and onions and cook until the sausage is completely cooked through, and the vegetables are soft. Set aside.
Build the Enchiladas:
Place 1/6 of the mixture down the center of a tortilla and top with ¼ cup of shredded cheese. Roll up and place seam side down in the baking dish. Repeat until all tortillas are filled.
Top Egg Mixture & Cheese:
In a medium bowl beat eggs, half and half, and flour. Pour over the tortillas in the baking dish. You can cover the dish and place in the fridge overnight or top with cheese and bake immediately.
Chill Overnight:
Cover the baking dish with plastic wrap or foil and refrigerate overnight. This not only allows the flavors to meld but also simplifies your morning routine as all the hard work is done the night before.
Bake to Perfection:
When ready to bake, uncover dish and sprinkle remaining shredded cheese over the tortillas. Cover baking dish and bake for 35 minutes at 350 degrees F. Uncover dish and bake 10 minutes longer or until set and cheese is melted.
Garnish and Serve:
Sprinkle optional toppings like sour cream, sliced green onions, or fresh cilantro over the hot enchiladas. Slice, serve, and savor the budget-friendly deliciousness!

- 1 tablespoon olive oil
- 1 onion sliced
- 1 green bell pepper sliced
- ½ teaspoon ground sage
- 6 large flour tortillas
- 2 & ½ cups shredded sharp cheese
- 5 eggs
- 2 cups half-and-half
- 1 tablespoon all-purpose flour
- Salt & pepper to taste

- Preheat oven to 350 degrees F.
