It’s packed with a ton of creamy, Italian-inspired flavors including fresh garlic, parmesan, sun-dried tomatoes, and spinach. This dish contains only 6g of carbs per serving and can be paired with a serving of pasta, or if you want to keep this dish low-carb, try pairing it with a serving of mashed cauliflower or a simple side salad.

HOW TO MAKE TUSCAN CHICKEN
This dish may look a little intimidating, but it’s so easy to make! Start by preheating your oven to 400 degrees F . In a medium bowl, mix together the cream cheese, spinach, garlic, black pepper, Italian seasoning, and parsley.

Slice two large chicken breasts in half, horizontally, and place them in the bottom of a baking dish. Drizzle the chicken with olive oil, and season with salt, pepper, and Italian seasoning. Spread the creamy spinach mixture on top of the chicken and top with sliced sun-dried tomatoes. Sprinkle with shredded mozzarella cheese and cover with foil.

Bake for about 20-25 minutes covered, and 15 minutes uncovered or until the chicken is cooked through and the cheese is nice and golden. Serve immediately with your choice of sides and enjoy!

Creamy Tuscan Baked Spinach & Chicken
Ingredients
- 1 lb boneless skinless chicken breast or 2 chicken breasts, sliced in half horizontally
- 3 tablespoons olive oil
- 8 oz cream cheese softened
- ¾ cup frozen chopped spinach thawed and dried
- 3 cloves garlic finely chopped
- 1 & ½ tablespoons Italian seasoning
- 1 teaspoon dried parsley
- ½ cup sun-dried tomatoes drained and thinly sliced
- 1 & ¼ cups shredded low-fat mozzarella cheese
- Salt/pepper to taste
Instructions

Wonderful. I used fresh spinach verse frozen. This is due to what I had on hand. I just cooked it until it became slightly wilted. I have already shared this with friends and family.

Delicious and easy – perfect week night meal. My notes for next time is to use the oil the sun dried tomatoes were in to drizzle over the chicken. Hopefully less waste and more flavor!

Why do you cut the chicken? Are you stuffing it with the cream cheese mix?
Hi! So I cut the chicken in half because the breasts were very thick, but you can choose to leave them whole.
Can you use cubed chicken in this dish. Would it cut down the cooking time? Looks delicious
Yes, you could use cubed chicken, but it would possibly reduce the cooking time. I would set the cooking time for 10 minutes less and check on it after that.

Yes, you can. Keep in my that the texture of the mixture may be a little softer, but still very delicious!

I just made this for dinner tonight alongside some asparagus and mashed potatoes and it was amazing! I seasoned the chicken throughly and even added a little garlic powder and a few other seasonings to the cream cheese mixture. This dish is a win in my books.

Great recipe. Used fresh spinach as it was what I had in fridge also some left over passata over the chicken before the cream cheese. Was a little runny after cooking due to using passata. so just drained the red sauce. Great taste and I will add more of the herbs next time as I was using sparingly.
