Preheat Your Oven: Start by preheating your oven to 350°F. Prepare a baking dish by spraying it with nonstick cooking spray.

Prepare the Croissants: Cut each croissant in half lengthwise, splitting the top and bottom. Place the bottom halves in the prepared baking dish and set aside.

Cook the Bacon and Eggs: Pan-fry the bacon until it’s crisped to your liking, then remove it from the skillet. Reduce the heat to low, leaving a bit of bacon grease in the skillet. Whisk together the eggs with a pinch of salt and pepper, then scramble them in the hot skillet until they are fluffy.

Assemble the Sandwiches: On the bottom half of each croissant, layer one slice of Colby Jack cheese, ¼ of the scrambled eggs, three slices of bacon, and one slice of Swiss cheese. Place the top half of the croissant on each sandwich.

Add the Butter Topping: In a small bowl, whisk together the melted butter, mustard, Everything Bagel seasoning, garlic powder, Worcestershire sauce, and a bit of salt and pepper. Brush this mixture over the tops of the croissants, then sprinkle the chopped green onions on top.

Bake: Bake the sandwiches in your preheated oven for 10-12 minutes, or until the cheese is melted and the croissants are golden brown.

How to Freeze and Reheat Your Croissant Breakfast Sandwiches

If you want to make these sandwiches ahead of time and freeze them for later, simply follow these steps:

  • Wrap Individually: Wrap each sandwich tightly in aluminum foil or plastic wrap, then place them in a freezer-safe bag or container.
  • Freeze: Store the sandwiches in the freezer for up to one month.

To reheat, unwrap a sandwich and place it on a microwave-safe plate. Microwave on high for 1-2 minutes or until heated through. You can also reheat them in the oven at 350°F for about 15 minutes for a crispier result.
