Step 1: Sauté the Vegetables

In a large nonstick skillet over medium-high heat, add the olive oil, onion, bell peppers, and garlic. Sauté for 5–7 minutes until the vegetables are tender and fragrant. Transfer the mixture to a 6-quart slow cooker.

Step 2: Season and Add Chicken

Season the chicken breasts with half of the Cajun seasoning, cumin, smoked paprika, garlic powder, and ancho chili powder. Place the chicken in the slow cooker on top of the vegetables.

Step 3: Build the Chili

Add the white beans, diced tomatoes with green chilies, and chicken broth to the slow cooker. Cover and cook:

  • Low: 6–7 hours
  • High: 3–4 hours

  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and easy to shred. Shred the chicken directly in the slow cooker using two forks. Or you can shred the chicken on a cutting board and then add the chicken back to the slow cooker.
  • Add the sour cream, both cheeses, and the remaining seasonings, then stir well until combined. Cover and let the chili continue to cook on low for 25-30 minutes, or on high for 10-15 minutes, or until chili is creamy and slightly thickened.
  • Season with salt & pepper to taste. Ladle into bowls and load up with your favorite toppings, such as cilantro, jalapeños, lime juice, and sour cream.
