I’ve always been a brunch lover! It’s something about brunch that makes me feel like an elegant, Southern Belle! Lol!! I’m serious! Whenever my friends mention brunch, I always picture myself eating pretty and dainty food, served on fancy plates with the matching tea cups! And everyone is dressed in pretty dresses, with gloves, and lacy handkerchiefs! Oh, and hats!! Big, ol sunhats!! Lol! I know, that’s a bit much, but a girl can dream right?! Okay back to reality…lol!!
Lately, I’ve been experimenting with new veggies. My ‘go-to’ veggies are usually kale and spinach. They are sooo yummy, but I can’t put kale and spinach into EVERY recipe, so I had to branch out! During my weekly grocery trip, I saw a beautiful assortment of swiss chard and radishes and thought, ‘I need to use these in my next recipe!!’
I was a little skeptical about having radish and swiss chard for breakfast and I was even more skeptical about how these ingredients would taste together! Despite my worries, it turned out perfectly!! The radishes took on the flavors of the onions and garlic, and reminded me of roasted potatoes! Yum!! The swiss chard paired perfectly, and the eggs…OMG, SO GOOD!!!! Less than 300 calories for the whole bowl!! Switch up your normal breakfast routine and give this recipe a try!
Swiss Chard, Radish, and Egg Breakfast Bowl
Ingredients
- 1 bunch swiss chard stems removed and coarsely chopped
- ½ lb radishes sliced
- 1 small onion sliced
- 2 cloves garlic minced
- 2 Tbsp olive oil
- 2 large eggs
- Salt and pepper to taste
Instructions
- On medium heat, add oil, garlic, onion, and radishes to skillet. Cook until veggies are tender.
- Add swiss chard to skillet, and toss to make sure that all ingredients are mixed. Cook until swiss chard is tender and add salt/pepper to taste. Distribute evenly into small, serving bowls.
- In the same skillet, on medium heat, crack eggs (making sure not to disturb the yolk). Fry until the egg white is firm and the yolk is slightly set.
- Place each egg on top of each bowl and Enjoy!

Wow, that looks like a great breakfast. I love swiss chard, and radishes, but I’ve always ate them for lunch or dinner. Making a healthy egg bowl is a great idea.

This was such a yummy meatless Monday meal! I only subbed the radish greens for half of the chard and I was not disappointed! This will be in regular rotation as my cool weather veggies are harvested.
