These Easy Cheesy Taco Stuffed Zucchini Boats are a great way to enjoy a healthy taco night and get in extra serving of vegetables at the same time!
So, my mom dropped by our house the other day with two large boxes of produce! There were tons of potatoes, onions, apples, oranges, and zucchini! I really don’t want anything to go to waste so I’ve been thinking of recipes to help use up my new collection of fruit and veggies!

Since it’s Taco Tuesday, I thought that I would make our taco night just a little bit healthier with these Easy Cheesy Taco Stuffed Zucchini Boats! I love using zucchini in my recipes because it contains some pretty amazing health benefits!

The filling for these zucchini boats is a super flavorful combination of Mexican spices, lean ground turkey, cheese, and lots of veggies!

When putting together these taco boats, I recommend carving out the middle of each zucchini boat before adding the filling. This allows for you to pile on even more of that yummy filling!
This is a great low-carb option for those watching their carb intake; only 6.5g of carbs for 1 taco boat. If you want to decrease the carb content even more, simply omit the corn and black beans; making them only 3g of carbs for 1 taco boat!

Easy Cheesy Taco Stuffed Zucchini Boats
Ingredients
- 4-5 medium sized zucchinis cut into lengthwise pieces, about 3 pieces per zucchini
- 1 lb. ground turkey
- 1 small onion diced
- 1 teaspoon chili powder
- 2 teaspoons garlic powder
- 1 teaspoon ground cumin
- ½ teaspoon oregano
- 1 cup diced tomatoes canned
- 1 cup yellow corn canned
- Âľ cup black beans canned
- 1 and ½ cup shredded sharp cheese
- Salt/pepper to taste
- Optional: 1 diced avocado
Instructions
- Preheat oven to 375°F.
- Heat a large skillet over medium-high heat and spray with cooking oil. Add in the onions and cook for approximately 2 minutes, and then add in the ground turkey. Be sure to break it up into small crumbles as it cooks.
- When the meat is thoroughly cooked, add in the chili powder, garlic powder, cumin, and oregano. Season with salt/pepper to taste and set aside.
- Use a small spoon to hollow out the center of the zucchini pieces, and then place them cut side up on a baking sheet.
- Divide the meat mixture equally into the hollowed zucchini boats, followed by shredded cheese, corn, tomatoes, and black beans.
- Bake for about 20-25 minutes or until cheese is melted and zucchini is tender.
- Top with avocado, if desired, and Enjoy!

I haven’t made this yet, but it looks good! I’m wondering how 4 zucchinis end up being 15 taco boats? The instructions only have you cut it lengthwise and then hollow them out. That would be 8 taco boats. Am I missing something? Please clarify.
Hi! I clarified the instructions a little better, but I was able to each zucchini into about 3-4 lengthwise pieces.
More like this recipe please.
