Pumpkin Spice Apple Cider Donuts

These Pumpkin Spice Apple Cider Donuts will give you all of those classic Fall flavors in one delicious bite! It’s the perfect treat to serve with a warm cup of apple cider, by the fireplace!
In preparation for Thanksgiving, I’ve been working on a few Fall-inspired desserts to serve alongside the sweet potato pie. Since my boys have been obsessed with donuts lately, thanks to some random You-Tube Show that they’ve been watching, I decided to make these Pumpkin Spice Apple Cider Donuts!

These donuts are probably the fluffiest donuts that you will ever taste! While I love a good fried donut every once in a while, baked donuts are my favorite because they are so incredibly moist!
WHAT KIND OF PAN DO I NEED?
When making baked donuts, I suggest using this Wilton Non-stick Donut Pan, and would also suggest getting two pans so that you don’t have to bake your donuts in batches of six. The sooner you can get done baking, the sooner you can enjoy this delicious treat!
HOW TO MAKE APPLE CIDER DONUT MUFFINS
Start by preheating your oven to 350 degrees F and greasing your donut pan with a nonstick cooking spray. Combine your ingredients and fill each donut tin about ¾ full. Bake for about 10-11 minutes or until the tops bounce back when pressed. Transfer to a wire rack and let cool slightly before covering them with cinnamon and sugar.

I recommend brushing each donut with little melted butter before coating them the cinnamon and sugar mixture. This allows for the donuts to have an even layer of the cinnamon and sugar mixture.
HOW TO STORE APPLE CIDER DONUTS?
These Pumpkin Spice Apple Cider Donuts are best when eaten the same day, but they can be kept in an airtight container at room temperature overnight, or up to 3 days in the fridge.

Pumpkin Spice Apple Cider Donuts
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 tablespoon pumpkin pie spice
- ¼ teaspoon salt
- ½ cup apple cider
- 2 tablespoons melted butter
- 1 large egg
- ¾ cup dark brown sugar packed
- ½ cup milk
- 1 teaspoon vanilla extract
To Make the Topping:
- ¼ cup melted butter
- ½ cup sugar
- 2 tablespoons ground cinnamon
Instructions
- Preheat oven to 350 degrees F and spray donut pan with non-stick spray. Set aside.
- In a large bowl, combine the flour, baking soda, baking powder, 2 teaspoons of cinnamon, pumpkin pie spice, and salt. Set aside.
- Next, whisk together the apple cider, 2 tablespoons of melted butter, egg, brown sugar, milk, and vanilla extract. Carefully pour into the dry ingredients and stir until smooth.
- Spoon the batter into the donut cavities and bake for about 10-11 minutes or until the tops are lightly browned and the donut bounces back, when touched. Transfer to a wire rack and let the donuts cool for about 5 minutes.
To Coat the Donuts:
- Combine 2 tablespoons of cinnamon and ½ cup of sugar in a medium bowl, and set aside. Brush a small amount of the melted butter on the front and back of the donut and dip the donut into the sugar and cinnamon mixture until completely coated. Repeat with the remaining donuts.
- Enjoy!
