Cinnamon Roll Baked Oatmeal
Ingredients
- 3 cups rolled oats
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 eggs
- 1 teaspoon vanilla extract
- 2 teaspoons cinnamon
- 1/3 cup maple syrup
- 2 cups milk
For Icing:
- ½ cup powdered sugar
- 1-2 tablespoons milk
Instructions
- Preheat oven to 375 degrees.
- Spray an 8×8 baking dish with non-stick cooking spray.
- In a medium bowl, combine all of the ingredients. Pour into the baking dish and bake for about 25-30 minutes.
- In a small bowl, combine the powdered sugar and milk. When the baked oatmeal is done, drizzle the icing on top of the oatmeal.
- Cut into pieces and enjoy.

This recipe was very good. My husband raved about it!
However it was difficult to know when it was done baking. After 25 minutes the center still seemed very wet, while the edges seemed to be done. Even after another 5 minutes of baking it still seemed too wet in the center. I gave it like 2 more minutes in the oven and then just let it sit on the stove to “set up”.

Finally!!! A baked oatmeal recipe that tastes like a cinnamon roll. I made a few tweaks to make it point friendly for me since I follow Weight Watchers, and even with my changes, this is still a fantastic recipe. This is my now go to for baked oatmeal!
