Ginger ale has been a staple in my family for generations. When I was younger, a glass of bubbly ginger ale was considered THE magical elixir that seemed to cure everything from chicken pox to upset stomachs. It was like a rite of passage in our home — whenever we felt sick, out came the ginger ale. Those were good times!

Fast forward to the present day, my kids came home with a nasty stomach bug yesterday, and guess what—I didn’t have any ginger ale! Gasp! I remember that I just bought some fresh ginger, so I decided to make my very own homemade mint ginger ale.   • Simple Syrup
  • Seltzer 

Start by chopping your ginger. Add the chopped ginger and mint to a blender, and top with ½ cup water. Blend until the mixture is thoroughly combined and strain the liquid through a fine mesh strainer and throw away any remaining pieces.

Pour over ice and add in simple syrup and lemon juice. Top with seltzer and mix. Garnish with fresh mint, if desired, and enjoy!

  • 5 fresh mint leaves and more for garnish
  • ½ cup water
  • 4 tablespoons simple syrup or to taste
  • 2 cups seltzer or more as needed

Instructions

  • Add the ginger, mint, and water to the blender. Blend and strain the liquid through a fine mesh strainer and throw away any remaining pieces.
  • Pour over ice and add in 2 tablespoons of simple syrup and lemon juice. Top with seltzer and mix. Garnish with fresh mint, if desired, and enjoy!
