Ingredients

Cake Ingredients:

  • 1 package yellow cake mix
  • ½ cup cup white sugar
  • ½ cup vegetable oil
  • 1 15oz can pumpkin
  • 2 teaspoons water
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon nutmeg
  • 2 teaspoons ground cinnamon

Vanilla Glaze:

  • 2 cups powdered sugar
  • 3-4 tablespoons whole milk
  • 1 teaspoon vanilla extract
  • Optional: Chopped pecans

Instructions

  • Preheat oven to 350°F. Grease a Bundt pan and set aside.
  • In a large bowl, and in all the cake ingredients. Using a hand mixer, or standing mixer, beat on medium speed for about 2 minutes or until well combined.
  • Pour batter into Bundt pan and bake for 40-50 minutes, or until an inserted toothpick comes out clean.
  • Cool for 15 minutes in the Bundt pan before flipping and releasing onto a cooling rack.
  • To make the Vanilla Glaze: Combine all glaze ingredients in a medium bowl and hand whisk until smooth. Pour over cooled cake and top with chopped pecans, if desired. Let sit for about 10 minutes to harden before slicing.
