If someone would’ve told me a few years ago that I’d be pouring a strawberry lemonade-inspired sauce over Brussels sprouts, I probably would’ve looked at them like they were a little confused! But let me tell you something…this sweet and savory combination is SO good!

I absolutely love anything strawberry lemonade flavored. There’s just something about that bright lemon flavor mixed with sweet strawberries that feels fresh, fun, and nostalgic all at the same time. So when I was trying to think of a new flavor combination for roasted Brussels sprouts, my mind immediately went to strawberry lemonade, and surprisingly, it worked perfectly!

What Are Brussels Sprouts?
Brussels sprouts are small green vegetables that belong to the cruciferous vegetable family, alongside broccoli, kale, cauliflower, and cabbage. They grow in little round buds along a thick stalk and are packed with nutrients like fiber, vitamin C, vitamin K, and antioxidants.
When cooked properly, Brussels sprouts become tender and slightly nutty with crispy, caramelized edges. And despite their bad reputation from years ago (looking at those boiled Brussels sprouts 👀), roasted Brussels sprouts are completely different and absolutely delicious.

The secret to restaurant-style Brussels sprouts is all about high heat, proper seasoning, and caramelization.
Here are a few tips that make all the difference:
1. Roast at a High Temperature
Roasting Brussels sprouts at 425℉ helps create those crispy golden brown edges that make them irresistible.
2. Use a Hot Pan
Placing the sheet pan in the oven while it preheats helps the Brussels sprouts start crisping immediately when they hit the pan.

3. Don’t Overcrowd the Pan
Giving the sprouts space allows them to roast instead of steam.

Step 2: Prepare the Brussels Sprouts
Add the cleaned and halved Brussels sprouts to a large mixing bowl.

- Balsamic vinegar
- Olive oil
- Lemon juice
- Garlic powder
- Paprika
- Salt and pepper
Reserve about 2 tablespoons of the sauce for serving later.

Reserve about 2 tablespoons of the sauce for serving. Pour the rest of the sauce over the Brussels sprouts and toss until they are completely covered.
- Carefully take the hot sheet pan out of the oven. Add the seasoned brussels sprouts, cut side down, to the hot pan.
- Roast for about 20 minutes, or until there is a browned crust on the cut side.
- Allow the roasted Brussels sprouts to cool on the pan for 1 minute before removing them with a spatula.
- Pour remaining sauce over the Brussels sprouts and top with crumbled feta, if desired. Enjoy!
