Gluten-Free Matcha Mint Chocolate Chip Cookies

It’s no secret that I have a HUGE sweet tooth!! I love sweets, especially chocolate! Chocolate is one of those foods that just makes life better!
When baking my chocolate sweet treats, one of my favorite brands to use is Enjoy Life! I love Enjoy Life products because most of them are made with 3 ingredients or less! They’re also certified vegan and certified paleo-friendly!
For these delectable Gluten-Free Matcha Mint Chocolate Chip Cookies, I decided to use the Enjoy Life semi-sweet mini chips! That rich chocolate flavor really brought these cookies to life!

And I love that they’re gluten-free! I make a lot of gluten-free desserts for my nephew, due to his gluten allergy, so I’m really glad that I found a brand that is free from the 14 common allergens without compromising taste!
I added matcha green tea and a slight hint of mint flavor to make these cookies extra special! Those flavors, paired with the chocolate, were the perfect combination!
When my nephew tried these Gluten-Free Matcha Mint Chocolate Chip Cookies, he thought they tasted AMAZING!! He compared them to a very popular Girl Scouts cookie and said that they tasted even better! I was thrilled because he’s a really picky kid lol!

The texture of the Gluten-Free Matcha Mint Chocolate Chip Cookies may surprise you! They were actually very soft, with a crumbly buttery texture! They literally melt in your mouth! I’m a fan of chewy, soft cookies so these were right up my alley!
To add a little extra flair, I decided to melt a few of my Enjoy Life semi-sweet mini chips and drizzle it on top of the cookies! That was possibly the best decision that I could’ve ever made! ? Gluten-Free Matcha Mint Chocolate Chip Cookies
Ingredients
- 1/2 cup Enjoy Life Semi-Sweet Mini Chips
- 1 and 3/4 cups oat flour
- 2 tbsp matcha green tea
- 6 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup butter softened
- 2 tsp vanilla extract
- 2 large eggs
- 1 tsp mint flavor
- *Optional: melted mini chips for drizzle
Instructions
- Preheat oven to 350 degrees.
- In a medium bowl, combine oat flour, matcha, baking soda, sugar, and salt. Set aside.
- In a large bowl, beat butter vanilla extract, eggs, and mint flavor until smooth & creamy.
- Gradually add flour mixture to the wet ingredients and stir until mixture is combined. Fold in Enjoy Life Semi-Sweet Mini Chips and scoop cookie dough ( about 1 tbsp for each cookie) onto an un-greased cookie sheet. Flatten each ball of cookie dough and bake for about 10-12 minutes, or until the bottom of the cookie is light brown.
- Transfer cookies to wire rack to cool. Drizzle with melted chocolate, if desired.
- Enjoy!
