Who doesn’t love an easy, delicious, and nutritious meal?? This 20 Minute Spinach Farfalle Pasta Carbonara is the perfect meal for a quick weeknight dinner!

Can I be honest with you for sec?? There are some days that I just don’t feel like cooking! On those days, I just want to pour up a bowl of cheese crackers and call it dinner! Lol!

Can anyone else relate?? For those lazy nights, I try to create recipes that don’t take a very long time to prepare, but are also delicious and nutritious.

One of my favorite ways to add in a few extra nutrients is to use a pasta that’s made with veggies! For this 20 Minute Spinach Farfalle Pasta Carbonara, I used a spinach based farfalle pasta! You can use any brand, but my favorite is Al Dente. Each serving of this pasta dish provided 1 full serving of spinach, which is amazing because spinach contains some amazing benefits!!

This Spinach Farfalle Pasta Carbonara was ready in 20 minutes! I started by making the sauce, which included bacon, fat free half and half, butter, white wine, garlic, and a few seasonings! Once the sauce was done, I added the pasta and that’s it!

This 20 Minute Spinach Farfalle Pasta Carbonara was absolutely DELICIOUS!! Each bite of pasta contained so much flavor! In my opinion, it tastes even better than the carbonara pasta that you order in a restaurant, but this one contains a few more nutrients!

20 Minute Spinach Farfalle Pasta Carbonara

Servings 8

Ingredients

  • 14 oz spinach farfalle pasta
  • 6 pieces bacon chopped
  • 2 tbsp butter
  • 1 cup fat free half & half
  • ¼ cup white cooking wine
  • 1 cup chicken stock reduced sodium
  • ½ cup grated Parmesan cheese
  • Salt/pepper to taste

Instructions

  • Cook spinach farfalle pasta per package directions. Drain and set aside.
  • In a large skillet, on med-high heat, cook bacon until done. Drain half of the bacon grease and return skillet to heat. Reduce heat to low.
  • Add butter, half & half, white cooking wine, chicken stock, and Parmesan cheese to the skillet. Stir frequently until sauce starts to simmer. Remove from heat and add in pasta.
  • Toss until pasta is completely coated with sauce. Season with salt/pepper to taste.
  • Enjoy!
